Halibut Curry Recipe (serves 4-6)
Ingredients:
2 tsp Olive oil
1 large Onion - peeled and finely chopped
1 large Green Bell Pepper - diced
1 large Red Bell Pepper - diced
1 large Yellow Bell Pepper - diced
2 cloves Garlic - minced
2 cups of Water
2 tbsp of “Better than Bouillon” Chicken Flavor
14 oz Full-Fat Coconut Milk
14 oz can finely chopped tomatoes
2 tbsp tomato puree paste
2-3 cubes of Golden Curry
2 tbsp Red Curry Paste
2 tsp Ginger - minced
2 tbsp Curry Powder - mild or hot
1 tbsp ground Coriander
½ tbsp ground Cumin
1 tsp Paprika
½ tsp ground Cinnamon
½ tsp salt
½ tsp black pepper
2 cups Spinach
2-3 cups Rice
4-6 Halibut fillets, 6 oz each
1 cup fresh Cilantro (optional, for garnish)
Instructions:
* Curry Sauce
1- Place large frying pan skillet over medium heat, add olive oil
2 - Add onion + red, green and yellow peppers + minced garlic to the large frying pan skillet, cook for 5 minutes, stirring often, to soften
3 - Pour 2 cups of water into a medium stock pot, heat to boil
4 - Add “Better than Bouillon”, stir and render down in the heating water for 2 minutes
5 - Add wet ingredients to the medium stock pot: coconut milk, can of tomatoes and tomato puree
6 - Add the red curry paste, ginger, curry powder, coriander, cumin, paprika, cinnamon, salt and pepper. Stir and cook for 1 minute.
7 - Bring to a gentle boil, stirring occasionally for 10 minutes
8 - Pour the softened onion, pepper and garlic blend into the boiling sauce
9 - Stir in the spinach
10 - Turn off the heat after the spinach has wilted
11 - Prepare 2-3 cups of rice per the instructions for the rice utilized
* Cooking the Halibut
1 - Preheat the oven to 425 degrees, line baking sheet with parchment paper, position rack in the middle of the oven
2 - Place Halibut filets on the parchment paper
3 - Bake Halibut for 10-12 minutes, checking Halibut after 8 minutes to test tenderness (overcooking halibut makes the meat less tender)
4 - Remove from oven, let rest
* To Serve
1 - Use a medium to large bowl. Place ½ cup rice in the bowl, plate the Halibut on top of the rice.
2 - Add generous servings of the curry sauce on top of the Halibut.
3 - Garnish with cilantro and jalapeños.
4 - Serve
