Ingredients Methods
MTR gulab jammun mix - 1 pack ( 175 gm)
Corn flour - 1 tbs
Water to mix the flour - 1/4 cup
Sugar - 400 gm ( 2 big glasses)
Water - 400 ml (2 same glasses)
Saffron / cardamon powder / rose essence
Oil To fry.
First make sugar syrup. Add sugar, water in a kadai, mix, Boil. Once it starts boiling, see the time. After 4 minutes switch off, add saffron, keep aside.
( for 100 gm jamun powder 200 to 250 gm sugar will be enough)
Measure the Jamun powder.Add corn flour, mix well without lumps. For one cup powder, use 1/4 cup water. Mix well to a soft dough, don't Mix roughly. Mix softly using fingers. Press gently for 2 minutes, using fingers.
Heat oil in low flame,.. Meantime start rolling. Make small balls, it will be double the size at end. Press gently in palm, roll without cracks. See the video for demo.
When oil is hot, switch off the flame, drop Jamun slowly, wait for 2 minutes, it will all come up slowly. Don't put laddle. When it comes up, on the stove, put in low flame. Rotate as shown. Let it cook for 10 minutes in low flame to dark golden. Remove from Oil, keep aside for 2 minutes. Put in warm sugar syrup.
Again switch off the stove, repeat the same. Let it soak in sugar syrup for 3 hours. Now it is ready.

    It should not be that dark color... it almost looks like its burnt and close to black color. Look at how its done at, for example, amul sweets shops. It should be very close to color thats on the MTR pack. Color should be close to dark red but with tinge of brown color. May be take out of hot oil 20 seconds earlier for that well done but not too well done that it appears its burnt.

    @@Benitaj1996 So charring it like charcoal ball makes the inner side cotton smooth? I don't think you have ever cooked/ate the Jamoon which doesn't look like its burnt up like in this video. Look up other videos here on youtube or try cooking yourself but keep the flame low and take out when it appears almost done but not quite yet done. If you do more, you get that intuition on when to take out and once you nail it, you will only laugh at other Jamums that burnt like a cow dung in the wild fire.
