Guide to Perfect Pork Belly Burnt Ends

Learn the secrets to making perfect smoked pork belly burnt ends, also known as meat candy! This BBQ finger food recipe will have your guests begging for more.

Pork belly burnt ends are quite a quick cook for BBQ, here's a quick breakdown of the cook in this video below:
- Trimmed skin off the pork belly and cut into large cubes
- Gave the pork belly a light coat in mustard to help the rubs stick to the meat (you could use olive oil if you really don't like mustard)
- Seasoned in my Honey Soy Slammer and Steak Shooter
- The pork belly went into the smoker at around 275F/135c, generally any fruit woods will go well with pork
- This pork belly took around 2 hours before the rub had set and I was happy with the colour
- After 2 hours the pork belly went into a tray with some butter, honey, brown sugar and some apple cider. You could use any fruity liquids, or if you want to keep the flavours more savoury you could use some chicken stock
- The tray was wrapped and went back into the smoker until the pork belly was probing tender which took around an hour more, the pork belly was reading around 208F/97c internally once I was happy with probe tenderness
- I finished the pork belly with my Hook Shot BBQ sauce, but if you've got another favourite glaze or sauce then feel free to use that!

Went and bought a bronco yesterday...... ran it in last night and am 1 hour into my first pork belly burnt ends cook..... It is criminal how easy dialling in the temperture is. I will let you know how the cook goes if im not too busy having tastebud-gasms !!!!

They both have their place. I absolutely LOVE my Weber kettle. Does absolutely amazing food, especially roast pork. Also does incredible reverse sear steak. I'm wanting to get into smoking, so doing a bit of research. I've been watching Aaron's videos for awhile and really enjoyed this one.

Nice mate! It was a cider from memory. Umm I reckon it’d go alright if you balance it with a sweeter sauce!
Sooo good. Do you use any type of mustard, mild american or another type? Any preference to mustard brand for a milder option so it doesn't affect the flavour?

You can use olive oil as a binder or any other sauce if you don’t like mustard.
