@@bluebaconjake405 kecap manis must be paired with terasi to cook many Indonesian dishes like nasi goreng, mie goreng, sambal, etc. we never eat terasi raw/ala carte like Vegemite lol it must be cooked to add flavor to food, same like fish sauce and oyster sauce.

No lol. You only have one brand and that’s the one you trust the most. Using different brands will make your food inconsistent in flavour and won’t be very good.

Hey, I'm Eastern European and the only one of those I don't have right now is the sweet soy sauce. I had proper Vietnamese egg fried rice a couple days ago and I'm making onigiri and miso for lunch today. The only thing I have trouble getting here are some of the Asian veggies, especially the leafy greens.

I have an Asian market near me so of course I have the chance of acquiring these easily but I know many many white families who don’t even know what half of this stuff is. Missing a few more: cooking wine - both white and brown, dark vinegar - very essential in many cuisines, sesame paste - super important in Sichuan cuisine, sesame oil - flavor bomb in many cuisines, Sichuan peppercorn oil - used to create spicy numb flavor, shacha sauce - used in many Taiwan cuisine and street food, doubanjian - a bean based hot sauce used in all kind of cuisines, sweet bean paste - widely used in northern cuisines, doenjian - Korean bean paste kind of like Japanese miso with stronger taste, Japanese miso - super useful for soup or marinade, okonomi sauce - used for yakisoba takoyaki and okonomiyaki, Japanese mayo - very different from western mayo sweeter and less sour, mirin - Japanese sweet rice wine super useful. I think now you have a full Asian kitchen.

I genuinely very much appreciate you mentioning the smell of fish sauce. It’s way more popular in the US now, but a little can really go a long way in terms of fishiness. I find it’s best when you can’t really tell that it’s there

Once upon a time I worked at a factory that made those 1/2 gallon Kikkoman jugs and a few times I was "lucky enough" to run that line. if you are filipino, calamansi and vinegar (regular or spiced, mainly white or coconut depending on how you are adding it) bagoong (salted/fermented anchovies, best for me is the ginisa/stir fried version)

I’m an orthodox christian and we have long fast seasons 4 times a year (about 40% of the year is fasting days). asian souses and spices, as well as common asian ingredients (like ginger, chinese cabbage, noodles, daikon and so on) make those days so much easier

Thanks for your suggestion, but I think you missed 2 other ingredients hoisin sauce, cherry 🍒 wine. Here other items you might consider Chinese noodles, rice, eggs ect. Also vegetables and fruits 😋 that can be another 2 chapters 😊 anoasio

These are all great ideas. If I can give everyone a single suggestion though, find Samyang's Buldak sauce... it is quite literally the best tasting hotsauce I have ever had. Same stuff they use in their spicy buldak noodles, but in bottle form. It honestly makes my mouth water just thinking about it.

I have tried all sorts of fish in the past few years and the fishy flavor always puts me off. However, a lot of recipes I see call for fish sauce. Does fish sauce make your food taste fishy, or does the fishiness gets cooked down and has a completely different flavor?

Rice vinegar isn’t a great sub for white vinegar in all cases if you want a more pungent flavor. Rice vinegar is usually a lot more mild at least that brand you have.

@@toria9799 True, taste is very subjective and just getting any acid in there when acid is called for is not going to be awful, but we should appreciate that not all vinegars are created equal. I think vinegar, like many fermented foods have very complex flavors and you can get really significantly different outcomes depending on your product choice. Also… back to the original point, that specific rice vinegar also is a bit sweet, so in some cases it’s just not a great replacement unless your flavor preference is for more sweet foods. Filipino Adobo for example really heavily relies on white distilled vinegar and does not have the same sweet acidic flavor profiles of other Asian dishes… it would be pretty significantly different with the substitution.

Yeah I agree. I have 6 types of vinegar in my kitchen and I have very specific uses for each. No way can rice vinegar sub for black vinegar. It’s delicious but it’s definitely not an all purpose type of pantry item imo.

Thanks for saying Sriracha is a spreadable version of chili oil/crisp. Made sense. Based on your ABC kecap (sweet soy sauce), they made _sambal_ too. Maybe childhood memories, maybe environment exposure, imo it's better than the other. They're more balanced & richer (& hotter). Try it if you can.

I have an Asian market near me so of course I have the chance of acquiring these easily but I know many many white families who don’t even know what half of this stuff is. Especially since we are on an entirely different continent with no ancestors in Asia.

Missing a few more: cooking wine - both white and brown, dark vinegar - very essential in many cuisines, sesame paste - super important in Sichuan cuisine, sesame oil - flavor bomb in many cuisines, Sichuan peppercorn oil - used to create spicy numb flavor, shacha sauce - used in many Taiwan cuisine and street food, doubanjian - a bean based hot sauce used in all kind of cuisines, sweet bean paste - widely used in northern cuisines, doenjian - Korean bean paste kind of like Japanese miso with stronger taste, Japanese miso - super useful for soup or marinade, okonomi sauce - used for yakisoba takoyaki and okonomiyaki, Japanese mayo - very different from western mayo sweeter and less sour, mirin - Japanese sweet rice wine super useful. I think now you have a full Asian kitchen.

I genuinely very much appreciate you mentioning the smell of fish sauce. It’s way more popular in the US now, but a little can really go a long way in terms of fishiness. I find it’s best when you can’t really tell that it’s there

Once upon a time I worked at a factory that made those 1/2 gallon Kikkoman jugs and a few times I was "lucky enough" to run that line. It either bored you out of your mind, or made your day miserable... no in between. I don't know if they still are making them or not, but it brought back some memories.

I have those and the following: - sesame oil - miso/doenjang paste - Chili garlic paste/sauce (this is my staple along with soy sauce) - Cooking Sake
I was pleasantly surprised to find out I have the majority of them... I just don't have the Gochujang paste. Gotta go buy some!
Oyster sauce is the shit. I put it in pretty much any asian and/or fish dish and it’s so good.
if you are filipino, calamansi and vinegar (regular or spiced, mainly white or coconut depending on how you are adding it) bagoong (salted/fermented anchovies, best for me is the ginisa/stir fried version)
Needed addition - 红花椒, aka hóng huā jiāo, the powder that makes everything better. And - Monosodium Glutamate, the straight up Superior salt.

While you're picking that up, grab a bag is Sichuan peppercorns too, cos if you have white pepper and/or chilli powder too, then you can make some banging ma la dishes. Edit: Also, doubanjiang, a spicy fermented broad bean paste.

I’m an orthodox christian and we have long fast seasons 4 times a year (about 40% of the year is fasting days). asian souses and spices, as well as common asian ingredients (like ginger, chinese cabbage, noodles, daikon and so on) make those days so much easier

Thanks for your suggestion, but I think you missed 2 other ingredients hoisin sauce, cherry 🍒 wine. Here other items you might consider Chinese noodles, rice, eggs ect. Also vegetables and fruits 😋 that can be another 2 chapters 😊 anoasio
These are all great ideas. If I can give everyone a single suggestion though, find Samyang's Buldak sauce... it is quite literally the best tasting hotsauce I have ever had. Same stuff they use in their spicy buldak noodles, but in bottle form. It honestly makes my mouth water just thinking about it.

I have tried all sorts of fish in the past few years and the fishy flavor always puts me off. However, a lot of recipes I see call for fish sauce. Does fish sauce make your food taste fishy, or does the fishiness gets cooked down and has a completely different flavor?

@@ronaldoalberto3510 when cooked fish sauce doesn't taste fishy. Like worchestershire sauce. You only need a little. Like one tablespoon in a whole pot of sauce. It adds umami and backbone. Makes the meatsauce extra savory

Rice vinegar isn’t a great sub for white vinegar in all cases if you want a more pungent flavor. Rice vinegar is usually a lot more mild at least that brand you have.

It works great for me in a lot of American recipes, bbq, soups, casseroles, etc. I guess it depends on the individuals taste.

@@toria9799 True, taste is very subjective and just getting any acid in there when acid is called for is not going to be awful, but we should appreciate that not all vinegars are created equal. I think vinegar, like many fermented foods have very complex flavors and you can get really significantly different outcomes depending on your product choice. Also… back to the original point, that specific rice vinegar also is a bit sweet, so in some cases it’s just not a great replacement unless your flavor preference is for more sweet foods. Filipino Adobo for example really heavily relies on white distilled vinegar and does not have the same sweet acidic flavor profiles of other Asian dishes… it would be pretty significantly different with the substitution.

Yeah I agree. I have 6 types of vinegar in my kitchen and I have very specific uses for each. No way can rice vinegar sub for black vinegar. It’s delicious but it’s definitely not an all purpose type of pantry item imo.

The dark soy sauce he used isn't normal dark soy sauce but mushroom flavoured ones, it has much more umami than normal ones, perfect for stir fried noodles

Dark soy sauce is so slept on, I may be white as hell, but I got Sesame oil, hot chili oil, Light and Dark soy sauce, oyster sauce, rice vinegar, fish sauce, and shaosing wine always stocked in my kitchen.
Thanks for saying Sriracha is a spreadable version of chili oil/crisp. Made sense. Based on your ABC kecap (sweet soy sauce), they made _sambal_ too. Maybe childhood memories, maybe environment exposure, imo it's better than the other. They're more balanced & richer (& hotter). Try it if you can.

Sriracha is ok but the Huy Fong chili garlic paste is perfect cause you can use it as a hot sc or add it while cooking to spice up soups etc
i have 13spice powder instead of 5spice. And i also make my own chili oil, but if i ever run out, ialways have 老干妈 (LaoGanMa) in the pantry
Lee kum kee low sodium soy sauce is great for adding some rich flavor without tons of salt. Also lee kum kee mushroom flavored dark soy sauce.
