    @@benireges wagyu is overrated. I had it in Japan and it's like eating a mouthful of pure fat. I'll take a USDA prime filet with a nice pan sauce over wagyu any day of the week.

    Honestly I would pick guga’s steak because I’ve never had wagyu, but I do have to admit, Nick really did a good job because 1. He made angel like fish. 2. He “had a fish out of the dumpster”

    We need more of Guga and Nick together. This is the most I've seen Nick smiling in any of his cooking videos. Nick's sophistication and vibrance in the ceviche is really giving the competition to Guga's classic steak and potatoes. I'd go with the steak just for the sheer amount of joy that can be relished with that meal.🥳🥳🥳

    Nick would kick Guga's butt if Guga was using Fish too!! Guga is afraid to do a 1 on 1 with nick with the same protein, just like he's afraid to do a REAL fat TEST!! Fat is NOT FLAVOR and I can prove it!

I think the abundance of mids or better in any rec state beats out crossing state lines every time. It's like roll what you need for the drive and just leave the rest for the home coming.

    Well, Dalstrong knives are far from top end knives, some people like to even call them a scam considering the specs vs the price. They look fancy, they have great customer support and marketing is off the charts. But the truth is, the steel is mediocre, they will never beat real forged knives by Japanese bladesmiths and they are also quite thick behind the edge which is not desirable. But it's a trade off you have to accept with mass produced knives. Maybe they'll work as a workhorse knife, but if you take them up against some delicate handmade lasers, you might as well be cutting with the spine of your knife.

    A real Chef is not doing vids on KZread. A real chef is working in a restaurant, being in a stress situation because he's doing 15+ dishes at the same time on a high quality. Doing one steak at a time without pressure doesn't make you a great chef

    If i had to pick one I think i would pick the ceviche. I only say this because after a few years of watching guga I've mastered my steaks and i regularly get austalian wagyu from my butcher. What I havent mastered is incredibly well thought out flavor cominations and decorative plating like the ceviche had so that level of sophistication with food is still very exciting for me. No shade Guga, I love your content

    What I like about this video is that, both dishes are pretty much reflections of eachother. Both are high quality products, seasoned very basically and use very rudimentary methods to cook. You don't need an immersion circulator, you don't need a blowtorch (he used one to light coals, but could be lit with other methods), literally everything cooked was using fire and acid, probably the two most plentiful methods of cooking on the planet.

    @@nconroy90 Curing is a form of light cooking due to how the acid denatures the protein. I don't know what you're on about. Also, there's a difference between making mistakes and making adjustments to a recipe to suit your tastes. Not everything has to be made the exact way it started. Recipes evolve and every chef who makes a recipe adds their own special touch to it.

    As a Peruvian ceviche fan, Nick’s ceviche was like an experimental/gourmet deconstruction of the “carretillero” ceviche from Lima. Even if it was not traditional, I like that he kept the basics intact. In the end, there are more types of Peruvian ceviche than most peruvians are aware of.

    That only means they planned the results. It's so obvious to me, I'm actually surprised that someone bought into the judgement between Angel and the other guy. They obviously planned the results.     I do get the feeling that Angel definitely liked the steak more, and as he said picked the fish because it impressed him. And I sort of get that. I highly relate to his taste in food and I could not imagine a fish dish impressing me that much. Deserves some credit honestly. Although I'm a bit on the fence about being honest about it, keeping it even for KZread seems like a safe play.

    Same here. While I have no problem making a "fusion" ceviche, I wouldn't call it Peruvian. The cevicheria down the road would throw me out if I asked them to make it with coconut milk.

    @@Brandon-89 Agreed, definitely not Peruvian ceviche but I love all kinds myself. He "cooked" the fish with 5 limes from what I recall watching though. I have traveled Peru and had ceviche at about every place I have been, whether it was in Iquitos (northern jungle city) or Cusco (high mountain Incan city) and anywhere in between and it has always been an enjoyment for me. =)

    They definitely need a youtube series for all of the big named cooking channels on here where they pair up two random people and tell them to make a dish(the same or similar) and see who comes out on top. Even if it was just a tournament im sure itd rack up a crazy amount of views and be very entertaining.

    I am Peruvian and all I can say is it’s very hard to make real Peruvian cebiche because ingredients are almost imposible to find anywhere else, glad you gave cebiche some spotlight though, big fan of you both

    Idea: freeze dry liquids and treat them as you would in a overnight dry brine. mix them with a bit of salt and cover a steak with them as a dry brine. Liquid ideas: beef stock , lime juice , fresh pineapple juice , coffee , yogurt whey.

    You wouldn’t really want to freeze dry those would you? Maybe just boil them off until very thick, then freeze dry? Also pineapple juice would pretty much become sugar? Beef stock sounds great though!

    @@boarbot7829 my idea with the freeze dried fresh pineapple juice is if it goes into the steak during the dry brine. The pineapple ensyme that breaks down protein might make it more tender then if it just soaked. Also has to be fresh squeezed pineapple juice since the enzyme is deactivated with heating.

But pineapple juice is around 10% sugar, and less than 1% bromelain (the enzyme which tenderises the meat) so a dehydrated pineapple juice powder would basically just be sugar, which is not nice on meat. Furthermore, it would probably barely tenderise it as it would be quite difficult for the powder to enter the meat. It would probably just form a sort of sticky paste then sit on the surface of the steak.

    You can’t go wrong with either. Although I do feel like nick elevated and transformed his ingredients. Gugas dish was no doubt amazing but I know he sandbagged a little on the transformation. Next round I want to see Guga take it up a notch with some sauce, or different creation. Maybe some carpaccio

    The ceviche looks amazing but as a peruvian I have never seen a ceviche like that one. In the past we use to put the lemon on the fish and let it rest for 30min or more but now just before eating it, we learn it from the japanese cuisine.

    Hey Guga. Love the video as always. Still Hoping you'll do a horseradish dry age. It is very similar to Wasabi chemically, and you said that was one of the best dry ages ever. Just want to see if the cheaper ingredient can do it.

    100% agree with Angel. I'm not huge into fish, I love steak, but after at least a couple of months without having any fish and eating meat every now and then... That ceviche at this precise moment would be my pick.

    Ceviche de carretilla is the best in Peru. They don't use coconut milk in Lima. Ceviche must have that hint of spice because lime washes it out, and both complement each other.

    There’s a Cambodian marinade/flavor bomb called kroeung. It’s made from lemongrass, shallots, galangal, garlic, and kaffir lime leaves. It’s very aromatic and I’d think it would make a good dry age experiment. You can buy it premade but making it yourself is also extremely easy.

    I had a vacation in the pacific island of Tonga, and they have a traditional raw fish dish they call "Ota" which is essentially what Nick cooked. It's absolutely delicious

    Ceviche?! Yes please, thank you! Haven't had it in years, and it is such an unusual treat. NGL, it sounds nasty: acid-"cooked" fish? 🤢 But if it is prepared well, it's incredibly delicious and memorable. 🤤 very little "fishiness" to it. Angel gets to eat world-class steak more often than most, so he was primed to enjoy the ceviche this day!

    @@drewt1717 Au the contrair, It is more like a final touch, we don’t let it marinade, It’s just to give it that acidic touch, but we don’t normally use snapper, our fish is so tasty, you could eat it just with a couple lime drops and our grouper or our sole tastes like a million bucks, But I do also admire a good steak.

    There are a lot of good places to eat it at the US, mainly in Florida, but also in NY, NJ, DC, etc. It’s not the same, but It’s still good, hope you find your near by peruvian restaurant.
