Ingredients for Guacamole Deviled Eggs:
6 eggs
1 avocado
Juice of 1 lime
1 tsp finely chopped red onion
1 tbsp chopped fresh cilantro
Salt and pepper to taste
Diced tomatoes for garnish
Smoked paprika for garnish
Instructions:
Boil Eggs:
Place eggs in a saucepan and cover with water. Bring to a boil, then remove from heat, cover, and let sit for 10-12 minutes. Cover boiled eggs with cold water and ice. Giving boiled eggs an ice water bath helps them peel easily. Peel and halve eggs lengthwise. Discard yolks from 4 eggs; reserve yolks from remaining 2 eggs.
Make Guacamole:
In a bowl, mash avocado with lime juice. Add the reserved 2 egg yolks and mash until smooth. Stir in chopped red onion, cilantro, salt, and pepper. Adjust seasoning to taste.
Fill Eggs:
Spoon guacamole mixture into egg white halves, evenly distributing.
Garnish:
Top each filled egg with diced tomatoes and a sprinkle of smoked paprika.
Serve:
Arrange on a platter and serve immediately, or refrigerate until ready to serve.
