Grinding stainless steel - why the speed should not be too high

There are several commercially available angle grinders with adjustable speed settings as well as specialised stainless steel angle grinders - which have a reduced speed setting out of the box. But why is this the case?
While high speeds can be beneficial when working with cutting discs, grinding stainless steel at too high a speed can result in tarnish colour. Tarnish colour not only looks ugly but also indicates that a change has happened to the material:
stainless steel could potentially rust at these locations.
This can be avoided by significantly reducing the potential speed of 11,000 to 12,000 rpm that many angle grinders can achieve for 125 mm discs.
