    @@longwhiteline3308 you could buy an electric smoker, prepare the ingredients and buy a grinder and casings. They even sell on Amazon the packaged spices for it. I have all, but everything at this point they are still in the box. Has been a rough 6 months for me, but soon I will try it.

    Recently discovered my father's family is from Poland. (I was given for adoption at 6 days old) His parents immigrated from Poland in 1890's . Funny, but I have always loved eating polish type sausages...and then recently discovered I really like perogies too!!! Nature and nurture...they both contribute mightily.

    I just made these and they are amazing. I live near a polish deli and I bought some sausage and didn’t know what to do with it. Didn’t want to waste it because it’s not cheap so I can upon this video and I’m glad. It was so good. Thank you!!

    My grandma always used to cook her kielbasa in beer in the oven. Funny how people think the prepackaged kielbasa in the grocery store is "real" kielbasa, but they don't know what it really is until they get it from a Polish meat market. My family always mixed ketchup and horseradish together to put on or dip kielbasa in. I could make a meal out of the sauerkraut and onions. looked delicious.

    Mary Kirkpatrick I mix ketchup with horseradish it’s the only cocktail sauce I eat. I like it nice and hot.

    My favorite meat market store is Nassau Meat Market in Greenpoint Brooklyn. I grew up there my whole life. I live in Catskill, NY now so we try to go at least for Christmas. My family is 100% polish. These videos bring me back in time, I wish you made more.

    I grew up in a multi-ethnic family (Dutch/English/French/Lithuanian) and we drank sauerkraut juice in the winter. It is an excellent source of vitamin C when winter came on and my carpenter father couldn't find much work which meant that oranges were too expensive. He hunted and fished to augment his meagre wages in those months. So we had quail, rabbit, pheasant and deer meat in addition to fish (and, yes, we were dosed also with cod liver oil--ugh!) Who knew that quail, rabbit, pheasant and deer meat were delicacies that commanded high prices in the haute cuisine restaurants of NYC!!!

    Wow amazing. I found your channel earlier today re:cabbage rolls, and they are in the oven now as I watch this. I ferment my own saurkraut and have some store bought kilbasa in the deep freeze. Wish I had a meat market close by to buy fresh kilbasa but alas no. I'm going to try this for sure. Thanks for sharing. ~ Tracey

    So far delicious! Can you show how to properly cook a outdoor grilled marinated chicken. My gram-pa is full polish (Ziewatski) but passed 10 years ago. One of his polish dishes was the grilled marinated chicken and it was awesome, but he did not use italian dressing. I tried that and it stunk. I know vinegar is one of the ingredients.

    Question: there is a sausage the Germans call "krakauer". Is that the same as Polish kielbasa or something slightly different? Love your videos! Thank you!

    Krakauer is similar to kielbasa, but more of a cold cut. Poles call it Krakowska.

    Wow, starving now! So, PC how do you do kielbasa, with sauerkraut and potatoes proper? My family always threw everything in a pot and boiled it. You had to fish for the kraut. Lol it was like soup, only you didn't eat the broth. I love kielbasa n kraut, and Polish food in general, but lets just say the family recipe left a bit to be desired. So whats the secret, Chef?

    The key here is your grill. Don't ever expect it to be as good on a gas grill. I hate my charcoal grill caus I get super lazy, but I suck it up and fire it up when I get dinner guest. Started off as a nice thing, turned into friends and family practically inviting them selves over,

    You are in New York right? I used to live in New Jersey and had many great Polish and German butchers, but I now live in northwest Florida and we are not lucky enough to have a Polish Butcher. Hillshire farms brand kielbasa isn't the same! They sell beef and pork and I get it, but it's so skinny and tasteless. Southerners don't know what real kielbasa is like! Wish I could get it through the mail! When you speak polish and you put the English below can you spell it in polish too?

    In Billarica, Massachusetts, USA, there was a Polish Deli in a gas station. I stopped in and asked for a good Kelbasa to be eaten uncooked and cold. I can't remember what it was called. The next time I was in the area he had closed up shop. Can anyone tell me what this might have been?

    @@ThePolishChef Thanks! Krakowska I will have to try, that might be it. My great parents 'Romanovsky' were from Krakow, 'Ryba' from Gadansk, and 'Smolkowski' from Warsaw.

    @@ThePolishChef My grandma Ryba used give me a quick smack with a wooden spoon when I misbehaved. One day when I was about 13, I said, "C'mon grandma, is that all you got?" [laughing, because she never hit any of us very hard and I had out grown it]. So she took it up a notch and broke the spoon on me [still laughing]. Disgusted, she threw it in the trash... and never again did I get "The Wooden Spoon". Is that a Polish thing?

    @@ThePolishChef My grandma also made Kielbasy and Sourkraut. I was never a big fan of it. But my mom would squeeze out the brine and rinse it well, then she added a pound of bacon and a bit of sugar. I liked it. I mistakenly mentioned to my grandma that my mom made the best Kielbasy and Sourkraut. She never forgave me for that. I miss her, she was no nonsense, and that rubbed off on me... along with her good sense of humor.
