RECIPE: Green Mango Juice aka Kairicha Panha
INGREDIENTS:
-3 medium-large green mangoes, washed
-1 cup sugar OR jaggery
-4 cardamoms, powdered
-pinch of saffron, powdered (optional)
-1/2-3/4 teaspoon salt
PROCESS
1) Wash mangoes
2) Place whole mangoes (not skinned) in a large pan 3/4 full with water. The skin works as a casing, ensuring the pulp doesn't go everywhere
3) Cover and bring to a boil over medium heat.
4) Simmer for 20-25 minutes.
5) In a mortar and pestle, grind up your cardamom, until it becomes a powder.
6) Take your jaggery and with a knife cut, until you get ~ 1 cup.
7) After 20-25 minutes, the flesh should be soft and the skins should be loose and yellowy. Test with a knife, it should go into the skin easily. Turn off the heat.
8) Drain off the water in the sink over a colander, cool the mangoes (10 minutes), peel the skin off with your hands or with a spoon. Then put the pulpy flesh into a bowl.
Optional: Squeeze the pulp off the stones and place in another bowl with a little warm water, to extract more pulp.
10) Add the jaggery into the pulp, mash the two together until smooth with the butter churner (or potato masher) - it makes it easier for the sugar to melt in the still warm pulp.
9) Stir in cardamom, saffron and salt with a ladel.
10) Ladel in the concentrate - around 2-3 heaping spoonfuls or more as desired
11) Fill the rest of the way with water and then add your ice cubes
12) Finish with a sprinkle of the black salt

This video was such a great experience. It almost felt as if i was in India. Drink looks delicious, complex, but delicious. Best of all, there are no chemicals added to it like store bought stuff here in US. In US, even if you buy whole foods they are still GM, and even if it's labeled "ORGANIC: it's still hard to trust the source. FDA and USDA did not prove to be reliable. Thank you for this wonderful experience. One day i will find all ingredients and make one for me, family and friends. :) Peace and good life with all of you...

I don't know guys, I think you're being too hard on this vid. When you cook gourmet it's nice to see a video that takes the high road and assumes you really want to make it totally from scratch. Sure you can buy nectars, and powdered cardamom, and put together a fair version but wasn't it nice just to watch it this way?

Very good points and tbh fresh spices are always best, pre-ground spices lose a lot of their punch sitting on store shelves as the volatile oils that give them their flavor degrade quickly once a spice is ground.

I love how authentic this is! And you can use regular granulated sugar instead of jaggery. Some people do that because they don't like the taste of jaggery. You would have to adjust the sweetness though, because sugar is sweeter :)

The ingredients can all be found at 'India Sweets & Spices' in California (multiple locations in Los Angeles) as well as 'Dual Specialty Store' 'Punjabi Grocery & Deli' 'Spice Corner' and numerous other places in New York. If you want to find an Indian market in England, there are plenty... Canada too! Just search on YELP for one near your city and if you are DESPERATE to try this drink then I would recommend ORDERING the ingredients online. BEST OF LUCK! ^_^

also the lady singing, sridevi, is not actually a singer but an actress, so that's why she sounds 'off' to say the least.
lol i literally have everything on hand, even the black salt cuz we grow pomegranate and it's great for sprinkling on top, the jaggery cuz my mom puts it in sweet rice, cardamom is for tea, and mangoes because its mango season in pakistan!! :D

That song was awesome!! I was raised around Indian people & have traveled to India when I was younger.. I love these fun type of songs & most things Bollywood... So, I think you both are silly, but I guess it's an aquired taste! lol :p

Ruchelle, both the saffron and black salt are can be optional. You can add a pinch of normal salt as well. As for the jaggery, you can substitute with cane sugar. Enjoy :)

That depends on how much jaggery you add. The amount they put in doesn't seem excessively sweet. You can taste the concentrate and adjust accordingly :)

ive only ever seen guur in weird cube form in a bag, not tin this kind of big block form but yes, jaggery is guur.

Yeah it is, we bought some from Chandigarh when I was in India in spring and still have it, it's a more natural way of having something sweet it's not completely processed but its just extracted from sugar cane and we still have loads. It's much more sweeter than normal sugar :)

Whatever this is it is MOST DEFINITELY NOT PANNAH. Pannah can be made with boiled raw mangoes, but generally, it used to be made with roasted mangoes, rw mangoes roaeted in the low embers of the choolha or the remanent heat of the open fire of the kitchen. , cooked by burying them in the hot ashes. Then the soft cooked mangoes are peeled, sweetened with jaggery (you can use sugar). NO cardamom or saffron ever used in this. The taste is a mixture of salt, sweet, tart spicy, minty, smoky, & the black salt is an integral part of its flavor profile, not its taste. Black saly is never used to salt any dish. It is used, like hing (asefotida) in really minute quantities, because of its very potent flavor. The procedure is the same as shown in the video. But the flavorings are dry roasted cuminseed powder (also used in small quantity for flabor), black pepper & fresh mint leaves. All flavorings are to be lept mild & light...Sardamom & saffron are used to flavor a dessert made with ripe mango pulp, & that is not called pannah. Pannah is a drink that is made & servesd ALL OVER INDIA, not just in Mumbai, & it is served only in the hot summer months.

Poonam Abbi This is your opinion. And Pannah has origin in Maharashtra. May be now a days it is prepared all over India. In India there are many ways to prepare same dish or fooditem or whatsoever... In Maharashtra Pannah is prepared by boiling raw mangoes... For us this is original and traditional way of preparing Pannah. Adding cardamom and saffron is optional..but of course everbody has a freedom to try a recipe according to their wish and taste....
