Greek Green Lentil Soup | A Healthy and Tasty Recipe

Ingredients:
* 250g green lentils
* 2 tablespoons of olive oil
* 1 medium onion, chopped
* 5 cloves of garlic, chopped
* 2 stalks of celery, chopped
* 2 carrots, chopped
* 2-3 bay leaves
* 1 teaspoon cumin
* 1/2 teaspoon chili flakes
* 1 teaspoon of salt
* 1/4 teaspoon ground black pepper
* 400g diced tomatoes
* 1.5 liters of water
* Chopped green parsley, for decoration
Method of preparation:
1. Rinse the green lentils well under running water and leave them to hydrate for 30 minutes in the water.
2. In a large pot, heat the olive oil over medium heat. Add onion and garlic, cook for about 2-3 minutes.
3. Add the celery and carrots and continue to cook for another 3-4 minutes, stirring occasionally, until softened.
4. Add the bay leaves, cumin, chili flakes, salt and black pepper.
5. Add the hydrated lentils, diced tomatoes and water, mixing well.
6. Bring to the boil, then reduce the heat to low, cover the pot and simmer for 20-25 minutes, or until the lentils are tender.
7. Taste and adjust seasonings to taste. Add a few sprigs of chopped green parsley and turn off the heat.
9. Serve the soup hot, with a slice of bread with mayo, croutons, a few drops of lemon or a spoonful of cream.
Tips:
* You can add other vegetables to this soup, such as zucchini, bell pepper or potatoes.
* You can use vegetable stock instead of water.
* This soup can be made a day ahead and reheated before serving.
