So, Stephen, it’s official. My wife and I will be back down south on March 15th. Conway, SC. Near Myrtle Beach. About 20 minutes. Came here to Wisconsin from North Carolina for wife’s family, and can’t wait to get back. If it’s even an option to visit and fish with you, even just from a pier, I’d definitely take a road trip to see you.

I love Pacific Barracuda, it's so versatile, also like to smoke it, season and mix with crab meat into patties(or imitation) vacuum bag it for a later cook, cornmeal fish sticks. Soak in apple cider vinegar and milk for a bit then let drain and dry real good for a malty cod like fry battered taste.

Looks delicious! One of my favorite fish to fry and eat is Atlantic sharp nose shark. Cut it into nuggs, and soak it in milk with a little crab boil before you batter it, 🤤👌 taste just like fried catfish.

Thanks for trying different things, Stephen! I've always been a big proponent that there really aren't many "trash" fish in the ocean. Back in my grandpappy's day, black drum were "trash fish". Today? They sell for $20 at a restaurant. I've tried hardhead catfish, alligator gar, and ladyfish. Sure, they may not be as good as redfish (what is?!!), but, prepared properly, they are just as good eats as anything else!!

I just noticed your boat is a Clearwater. I’ve had a 2300 CC for the past 7 years. I love it. I looked up cases of Ciguatera a while back and I’m sure there were 0 along the east coast of Florida where I fish. We always used to keep barracuda that size. I can’t convince the group I fish with now to eat them. I take one home for myself once in a while though. I also like that you consider mullet more than just bait. I saw you mention having mullet for dinner a while back. I love fresh mullet. Sorry you ran that far and didn’t get a tuna though. I’d love to see a mullet catch clean and cook.

It matters not how experienced a fisherman you are, no matter how good of health you may think you are in, an accident is still an accident and a medical emergency can come out of left field. With that being said, always wear your PFD. If your buddy goes overboard or if you go overboard that is not the time for “wishing and wanting “ a PFD. I always have on my Mustang inflatable PFD and I not promoting their product. It’s never a hindrance. In my profession I have recovered drowning victims that did not have to drown. Simple as that. I’ve said my piece.

Barracuda are excellent. When you get them trimmed out the fillets are beautiful. Far superior to Kings. I just wish I could catch more of them. The large wrecks they like are a little too far for my 17 footer. With the regs being so screwed up here in Florida you have to eat fish that in the past you would have thrown back. In the case of Barracuda though no way are they a trash fish to me.

I got sick on barracuda once. It wasn't very nice. It was only about 4 lb's.

Man I wouldn’t want to be close to that fish, myself and a few other crew members years ago caught a few and when we got them on the deck of the rig they would try to attack you. They have real teeth 😳
