    When the winemaker is using the appassimento method, do they have to blend the dried grapes with first run juice? it seems it would be too thick otherwise. Or is it because the yeast converts the sugar to alcohol and that thins it out?

    In exceedingly viscous musts it is difficult for yeast to operate, but there are many types of yeasts utilised, including starting yeasts that are able to perform the early tasks of initiating the fermentation which in turn converts the sugars into alcohol. This makes it possible to continue the fermentation
