It’s an old country southern thing, usually only Georgians know of it. It’s candied yams with pie crust baked in a deep pan. Its my sister’s favorite with extra juice n crust for her

My grandad use to make this for us all the time when I was a child. It was soooooo good and this recipe takes me back. One thing he did differently was the crust. He used to make a light crust something between pastry and phyllo dough. I will definitely be trying your recipe. I’m 61 now and haven’t had this since I was a child.

Like you, I am from the old school era where we used our hands rather than electronic gadgets. Staying in the kitchen with our grandmothers were key to learning real soul food. Much love to you! Simply perfection. This should have at least 10,000 likes because this is the way you make a crust and this is a hidden gem that everyone would love. I know many people like to buy store-bought crusts but nothing compares to making it from scratch. The technique for this that you showed is legendary. When I make my crusts I actually do everything with my heavy-duty fork and hands. My addition to this would be to use brown sugar, add lemon juice, and take some of those pieces of pie crust and put it inside the pie (almost like a dumpling). I'd have to do a huge pan of this because it wouldn't last.

Thx, yes sometimes I do add pie crust pieces inside, my grandmother used to do that too. I’ve used brown sugar before, but I’ve never used lemon juice but I’ve used a little orange juice, I’ll try the lemon juice. Thx for the suggestion❤️

May I suggest that you mix all of the dry ingredients together, sugar, spices, and cornstarch. That’ll be less stirring and breaking of the potatoes and eliminate the extra water you’re mixing in with your starch.

Much love to you! Simply perfection. This should have at least 10,000 likes because this is the way you make a crust and this is a hidden gem that everyone would love. I know many people like to buy store-bought crusts but nothing compares to making it from scratch. The technique for this that you showed is legendary. When I make my crusts I actually do everything with my heavy-duty fork and hands. My addition to this would be to use brown sugar, add lemon juice, and take some of those pieces of pie crust and put it inside the pie (almost like a dumpling). I'd have to do a huge pan of this because it wouldn't last.

Thx, yes sometimes I do add pie crust pieces inside, my grandmother used to do that too. I’ve used brown sugar before, but I’ve never used lemon juice but I’ve used a little orange juice, I’ll try the lemon juice. Thx for the suggestion❤️

@@AuntieKnowsKitchen You are an amazing cook. I sometimes use lemon and a little bit of frozen orange juice concentrate but the lemon juice or even extract adds to it.
I remember this as a child , my grandmother and my mother made this for us only thing they add raisins sometimes delicious thank you for the memories 😊

May I suggest that you mix all of the dry ingredients together, sugar, spices, and cornstarch. That’ll be less stirring and breaking of the potatoes and eliminate the extra water you’re mixing in with your starch.

When I make peach cobbler I use Monk fruit or unrefined sugar or stevia it still has a good flavor.
