This buffet was a lot cleaner than some I have been to, and they had a very nice range/array of choices. I love Chinese food, but usually there is too much American food mixed in (Pizza? Mac&Cheese? Fries? LOL I love those items but weird at a Chinese buffet). I would guess that is why the General Tso's was different - it is an American dish, not Chinese, so it may seem different. Depends on the "cook" I guess. I thought the price was great for the amount of food - I usually get tons of ice water when I get Chinese food (to offset the mountain of sodium and MSG). The only item that looked weird to me that you liked was the Hibachi chicken. Just the appearance and what I expect the texture would be like. But I probably would like it.

I think in general most Chinese buffets in America have been Americanized with even the dishes that actually originated in China being adapted to appeal to a wider American audience. So it doesn't seem that strange to have American options as well for the same reason. From experience, I remember having cow tongue and intestine at my friend's house growing up. Her family and her ate much differently at home, or every summer when she visited other family in China, than the food they served at their restaurant. I know there are definitely options you can order at most Chinese restaurants that are more true to what Chinese immigrants eat or the food you would eat if you visited China... but at a BUFFET? You are usually not going to get "Authentic" Chinese food. It's Chinese-American Food. Also a NOT fun fact: Before WW2 Japanese Americans operated a large number of Chinese Restaurants in America. Fortune cookies were made by a Japanese American and had Japanese American manufacturers. Therefore a lot of Chinese restaurants would have fortune cookies because their owners were Japanese American. After our country took a cue from Nazi Germany and Roosevelt ordered that Japanese Americans be put into internment camps... Chinese Americans took over the restaurants they left behind and also the manufacturing of the fortune cookies. Which is why fortune cookies are now synonymous with Chinese restaurants despite not being Chinese or Chinese-American.

As a Chinese I’ve been to many of course restaurants even tho I’m more into American stuff but for the Chinese buffet it’s hit or miss some are good some are scummy.
