    I did this for Christmas a few years ago followed it to a tee. Came out great... beyond great. I still had plenty leftover goose bits to make a most spectacular soup with. The soup was more than satisfying on the cold winter nights we had that year.

    @le khanh, Stick a thermometer in it (I use one with a long cable so I can read the temp outside the oven) and you're done when it hits 135F/58C. You can take it out earlier to drain the fat and open up the legs at 110/115.

    That looks absolutely fantastic! I've wanted to do goose for a couple of years now, and I trust Chef Ramsay's culinary prowess implicitly. I've tried a few of his recipes, the eggs benedict were a smash, and his method for doing steaks is brilliant. A goose is quite a bit more complicated than eggs I'd imagine, but I'm doing it this year. :)

    I love goose for christmas 😍 its a tradition in our family that my mom makes one every year. She always gets a fresh one from our closest farm and fills it with nuts apples and onions. She roasts it in the oven over night and gets up every hour to take out the fat and brush it with a special spice mixture... Its the best thing ever! ❤️

    I should've watched this last Christmas. I bought a goose for Christmas (which set me back £80 😰) and I cooked it for the time and at the temp specified on the box it came in and the bird was so overcooked the meat had shrunk to practically nothing and had separated from the skin. It ended up more like dry crispy duck. To say I was pissed off was an understatement!!!

    Most people are afraid to cook goose because of the high fat content, so we're going to cook it out. -takes out the Goose and pours all the fat into a pitcher- Look at all that Goose fat, it's a bit of a chef's treat, you can use it for anything. -drinks the entire pitcher of Goose fat- It's magic dust!

    Guys first time i made a goose today and i choose to make this recipe cause it only takes a cooking time of about 1 1/2 Hours and not like 3-4 hours with the same temperature like other recipes. And maaan...Gordon didnt dissapoint me. This was fcking delicious! I highly recommend this! Dont know why others cook it three times as long as this, that must be waaay to long.

    I love seeing the soft side of Gordon Ramsay! I know that he's a bit of a hard-ass when he's working on Kitchen Nightmares or Hotel Hell, and we all know he's a lunatic in Hell's Kitchen. But when he's doing stuff like this, and when he's with his family, he is legit the softest teddy bear you'd ever meet :)

    Cristina Torres He is, for all intents and purposes, a nice guy who's passionate about cooking. He's only a hardass on Kitchen Nightmares and Hotel Hell because he deals with trained chefs who should know how to work in a kitchen. Try watching Masterchef, and you'll see a close representation of how he really is.

    Artie Wagoner Hi Artie. Like Aleska said, just in the fridge. The first time I drained it off and stored it in sterile jars I left it on the side to cool and wondered why it didn't turn milky white like the goose fat you buy in shops. it wasn't until I stored it in the fridge then it solidified and turned white.

    BTW - if any of you are in the US... when he says 250... he must mean Celsius... because if it's Farenheight... you'll wind up with a trip to the Emergency Room for Christmas... :) ( presume he roasts the skin for 15 minutes at 500F and then down to 375 for the rest of the cooking). :)
