Gordon challenges Chef Nyesha Arrington to make something tropical…. so she’s setting her sights on a Hawaiin themed recipe! Nyesha takes nachos to the Next Level by featuring Poke. This ultimate game day snack never looked & tasted so good. Mahalo Chef! #sponsored @SimplyBeverages
INGREDIENTS
Wonton Chips
Neutral oil, for frying
Wonton wrappers, cut in half
Furikake
Poke
1 pound tuna or salmon, diced
¼ cup soy sauce
1 tablespoon toasted sesame oil
2 teaspoons toasted sesame seeds
½ cup shelled edamame
1 teaspoon gochugaru
1 small white onion, thinly sliced
Freshly ground black pepper
Spicy Aioli
½ cup Japanese mayonnaise
½ cup sriracha
Toppings
Scallions, sliced
Cucumber, sliced
Jalapeno, sliced
Avocado, sliced
Fried shallots
Cilantro leaves
Pickled ginger
Lime wedges
Macadamia nuts
PROCEDURE
Make the wonton chips: Heat your oil to 350℉. Place the wonton wrappers into the oil and cook until they are golden brown and crisp, about 2 minutes. Remove the chips to a wire rack and season with furikake.
Marinate the poke: In a large mixing bowl, combine the tuna, soy sauce, sesame oil, sesame seeds, edamame, gochugaru, onion and black pepper. Toss to combine and set aside.
Make the aioli: In a small mixing bowl, combine the mayonnaise and sriracha.
Build your nachos: Plate the wonton chips on the bottom of a serving plate. Top with the poke, spicy aioli, scallions, cucumber, jalapeno, avocado, fried shallots, cilantro, pickled ginger and lime wedges. Grate the macadamia nuts over the top and serve.

    I think there are enough toppings to allow each bite to have a little of everything without getting soggy. I'm most skeptical of the tuna amount. That said, I think all nachos should could with a side of fresh chips just to make sure the ratios are right.

    This plating would be fine without the chips underneath, served around or on the side would be more sensible.

    I think some of those components of the dish could be put into the sauce with eating tongs replacing the finger/fork to serve the chips. I like chop stick, so eating it makes sense like that on my own, but serving a signle serve tong and a bowl would be more convienient, since thre are so many toppings. It looks good.

    I would add raw mango slivers for an elevated taste; don't know if I care for the ginger in it. Its confusing the palate a lot. I did enjoy and appreciate Nyesha's talk through the whole preparation. I tend not to talk at all when I'm cooking seriously.

    The first thing I ever learned to cook, outside of an egg, was stir fry from scratch. I was 7. I wouldn’t eat it, because it was so unusual, so my dad taught me from scratch, and we used it as extra credit for school (2nd grade). That’s when I learned that raw ginger tastes like “hot soap,” and how to bone and skin a chicken breast.

    i got nachos for you Gordon , cook the steak cut it up into pieces make some beans and nacho cheese with tomatoe , onion and jalapeños that are spicy , use Doritos as the chips pour over your ingredients and bam you got Nachos
