i don't believe there is a real side of him. different environments trigger different sides of him. same goes for everyone. now he's in the middle of a peaceful nature in a position where he's learning from someone, obviously he's not gonna get pissed. but when he's in the "stressful" atmosphere of a busy kitchen, it's easier to get heated.
