To Make Filling
Cauliflower / Gobi - 1 No.
Onion - 1 No.
Garlic - 1 Tbsp
Ginger - 1 Tbsp
Green Chilli - 1 No.
Coriander Leaves
Salt - 1 Tsp (Buy: amzn.to/2vg124l)
Turmeric Powder - 1/2 Tsp (Buy: amzn.to/2RC4fm4)
Chilli Powder - 1 1/2 Tsp (Buy: amzn.to/3b4yHyg)
Cumin Powder - 1 Tsp
Garam Masala - 1 Tsp (Buy: amzn.to/2TPe8jd)
Oil - 2 Tsp (Buy: amzn.to/2TPe8jd)
METHOD:
1. For the dough, take wheat flour, salt and ajwain seeds in a large bowl.
2. Mix them all well and gradually add water to prepare a nice dough. Knead it for 5 mins and let it sit for 30 mins by covering the bowl with a lid.
3. For the filling, take grated cauliflower, chopped onions, finely chopped garlic, ginger, green chillies, coriander leaves in a bowl. For seasoning, add salt, turmeric powder, red chilli powder, cumin powder, garam masala powder to the cauliflower mixture and mix well.
4. Take oil in a wide pan and heat it. Gently transfer the prepared cauliflower mixture to the pan and saute until the raw smell is gone.
5. Turn off the stove and keep the filling aside.
6. Divide the rested dough into small portions and make each portion into a small ball.
7. Roll each dough ball by dusting some flour on the rolling surface and place the cauliflower mixture in the center.
8. Seal the filling on all sides by pulling the dough from the edges to the middle.
9. Roll the parathas evenly and place them on a hot tawa.
10. Keep flipping the parathas and cook them on both sides by smearing some ghee on both sides.
11. Once the brown spots appear on the paratha, remove the paratha from the pan.
12. Delicious Gobi Parathas are ready to be served hot and nice with curd or any pickle by the side.
Gobi Paratha is a classic and nothing else can beat its taste when done properly. In this video, you can see the preparation of a nice, North Indian style Gobi Paratha recipe which is mainly made with cauliflower and wheat flour. To the gobi/cauliflower filling, we add a few spice powders and condiments to add a nice flavor. The filling is then filled in a wheat flour dough to be made into a delicious paratha. This is a restaurant style dish and anybody who doesn't enjoy cauliflowers would love having this one for its pleasing taste. You can serve this one with curd or any simple pickle by the side. You can add less of you want
Garlic haldi garam masala not needed. Onion can be optional. Grated gobi grated ginger , cumin seeds , jeera , coriander chilli powder, green chilli, fresh coriander. Can use a little oil while cooking on pan , then added butter while serving . A small katori of dahi and some pudina chutney on the side .
