How do you end the middle stitch at the end of the shape so that the shape is completely filled in?

Hey! How do you secure stitches on the back of the canvas? As in how do I start and end the thread? I'm finding there's not quite enough tight stitches in the back to start/end

You stitch over the starting thread and at the end weave in the tail.

What kind of threads should we use?

You can use literally what ever threads you like on canvas Nadia! Cotton, silk, wool, linen.... You can put threads together in the needle for some nice effects too. I suggest just trying them out on the edge of the canvas to make sure you get the right quantity so that you cover the canvas but you don't have so much thread going through one hole that it distorts the weave. The stitch you are doing will also alter the amount of thread you need to experiment first. Have fun playing!

What is the correct writing of the third stitch? And where can I find more explanations for it?

From left to right: Upright Gobelin, Gobelin Filling and Encroaching Gobelin. You will find these stitches in most stitch gudies

Are these always the same size? Meaning, is Upright always 3, Encroaching always 4, and Layered always 7?

No you can do it over what ever count you like Kimberly, it's how the stitches fit together that's important. The gobelin filling needs to be over an odd count though so that the rows fit together.
