Goan Prawns Curry | Goenchi Sungta Kodi

The Goan Prawns Curry (Goenchi Sungta Kodi in Konkani) is one of the best coconut-based curries one could ever try!
Pairing the unmistakable, lovely flavour of prawns (or shrimps) with the commonly used spices, tangy tamarind and sour Aambya Sol, has brought into existence a curry so aromatic and exploding with flavour, yet so appropriately balanced, it is indeed a culinary genius. Goan recipes are distinguished by their bright, show-stopping hues, which in turn bring satisfaction not only to one's belly but also to the eyes :) Honestly, it's rare to not spot vibrancy in our dishes- it's no wonder that Goans also have bright, cheerful behaviours!

1 US Cup = 240 ml
Ingredients:
20-30 Prawns, washed and deveined (I got them in mixed sizes)
1/2 teaspoon Salt
For the Curry Paste:
1 Cup or 90 grams Fresh, Grated Coconut
1 Tablespoon Coriander Seeds
1/2 teaspoon Turmeric powder
1 teaspoon (levelled) Cumin Seeds
5 Black Peppercorns
5-6 Garlic cloves
1" piece of Ginger
2 dry, red Bedgi Chillies
3 dry, red Kashmiri Chillies
A small lemon-sized ball of Tamarind soaked in warm water
Water as needed for grinding to a paste
For the Curry:
3 Tablespoons Oil
2 medium-sized Onions, sliced finely
2 Green chillies, slit
1 medium-sized Tomato, chopped
The prepared Prawns
The prepared Curry Paste
Water to adjust consistency
4-5 Aambya Sol (Dried, raw mango; can be substituted with equal numbers of Kokum rind or some Tamarind juice)
Salt to taste
1/4 teaspoon Sugar
A slit chilli, optional
Fresh, finely chopped Coriander for garnish

    Hello Sandeep :) Thank you very much for the gracious compliment about my cooking✨ To answer your query, the Goan Xacuti is a coconut based curry, which is loaded with spices. The coconut and spices are roasted before grinding. This paste can then be used to prepare a curry whether for meats/poultry/seafood. The classic Goan prawn curry is, as seen in this recipe, pretty simple and is flavoured (comparatively) lightly. I've uploaded a Chicken Xacuti recipe on my channel which might help you understand the difference. Thanks again, and I hope this helps, Sandeep💫

    Thank you Florency, i view the sungta kodi over and over, each one has a slight variation but thebasic is the same. I would prefer to put 6 to 8 kashmiri chillies. It gratifies me just looking at it being prepared, what more eating it....thanks again. Love the goan background music tooo...just lovely. Why bedki and not kashmiri....thanks

    Our classic Goan recipes have so many variations in preparation, and I think that makes them all the more special- as you have already said, the core of it is the same, yet there is always a unique touch that makes it feel more like home 💕 The preference for the type of chillies would depend on palate and the eyes! No harm in adding more of one type, or skipping one entirely. I like to use both since they contribute differently to the recipe- kashmiri for colour, and bedki for the heat😋 Thanks for your interest in my recipe, Mary, and I hope my I've answered your query💫

    Similar to our Thai curry, we use coconut milk. This must be influence of Indian culture in southeast asia; Ayudhaya to Rattanakosin (Bangkok)

    Hello Theresa :) All you've mentioned could possibly make a curry sour, yes, which is why quality of ingredients and judgement in taste should be considered. In this particular recipe, I found that the onions help balance the acidity of tomatoes and also, that a higher hint of sourness (from tamarind/aambya Sol) at the start can help the prawns draw greater flavour from curry as it is allowed to simmer. It's like the curry lends acidity to the prawns to make the taste of the latter more pronounced (working almost like a marinade). The end result is more balanced than expected 💫 Also, thanks for your question, you asked it very gracefully💕

    Authentic Goan curry tomatoes. are not used. So much of sour ingredients ' tamarind and tomatoes and aam sol!!!!' Gosh !!!
