A biscotti with my morning cup of coffee is a nice way to start the day. I particularly enjoy these Gingerbread Biscotti, as they are not overly sweet, have chunks of hazelnuts, lots of raisins and chocolate chips, lovely flecks of rolled oats, just a hint of molasses, and are warmly spiced with ground cinnamon, ginger, and cloves.

Oh my gosh...made these for the last couple of holidays and everyone loves them! I get requests from family and friends to make these throughout the year. Here it is, summer in California, and I'm making them again. The flavors in this delightful recipe, remind me so much of my grandmother's fruitcake. I love when these bake and the aroma of the spices fill my home with comfort, and joy!
I asked my Dad for a mixer for my birthday because over this summer I want to get better at baking and cooking, and your videos have really got me excited to try out baking. He ended up buying me the same mixer you have 😄

Hi Stephanie, this kind of cookies are called either "cantucci" or "tozzetti". Biscotti in Italian means cookies in general.
I might try making Biscotti some time this year. Hopefully I could somehow afford a KitchenAid.

For this recipe you could make it by hand, as all the ingredients are simply stirred together.
Yesterday I made Cappuccino Biscotti and everybody in the family loved them. I want to try this recipe but I don't get molasses easily. Can I use any replacement. Would be grateful.
Thanks for this video, I plan to make some tomorrow! One question though: I see you're cooking them in a convection oven. If cooked in a regular oven, do any temperature adjustments need to be made?

The temperature given is for a regular oven so no changes have to be made.

Stephanie, I have made these three times and each time the dough is Much wetter and stickier than yours. I have weighed everything with my kitchen scale so not sure what I’m doing wrong. Next time I will add 1/2 Cup more Flour. I love how they taste but what a Mess to make!

If you weighed all the ingredients the only thing I can think of is the size of your eggs. I find different brands define a large egg differently. Out of the shell the 2 eggs should weigh about 100g. If yours weigh more that could be the reason and you may want take some out. Whisk the eggs first and remove enough to make 100g.

Is it 180C fan forced? Are all your recipe temperatures based on convention or fan forced ovens?

The temperature quoted is for a regular oven. Depending on your oven some convection ovens require a 25F or 15C reduction in temperature. Check your manual to see if your oven requires a reduction.

Joy of Baking thank you. I have one other non related question if you don't mind. Do you know if a u or w shaped heating element is preferable to 2 straight bars across? Have you had any experience with both and if so how do the results in cake baking compare?
My mouth was watering when you read out the ingredients until you came to the chocolate. I never think of ginger and chocolate as flavors that go together.

If you don't like the idea of adding chocolate chips, you could replace them with raisins or other dried fruits.

Yes. I think raisins would be much more complimentary. After all, I'm pretty sure Hermits have ginger and raisins in them. Don't they?

There are a LOT of extra ingredients I don't want and would like a recipe that's plain gingerbread. There are over 2 cups of add ins like raisins! Ugh. I hope this works without all that.
