Getting Started with Food Preservation: Freezer Meals, Stocking the Pantry | Becky of Acre Homestead

In the homesteading world, we place a lot of emphasis on sourcing food well and producing it at home when possible. With all of the hard work we put into obtaining high quality food, we have to have a plan for what to do with it! In today’s conversation, Becky shares about her process of preserving food using various methods: freezing, freeze drying, canning, etc. She also shares some practical tips about planning for and executing a successful freezer meal preparation day. We cover plenty of simple and attainable ideas in this episode; you don’t want to miss it!

    I’m disabled, so I have about 1/10 of Lisa’s energy. I make freezer meals here and there, when I make something like taco soup, I just set up a freezer bag and add the same ingredients to the bag as I’m adding to my pot. By the time dinner is ready I have a freezer meal ready as well. I do that maybe once a week or every other week.

    Becky’s approach to batch cooking is realistic and obtainable. I do it a little differently because of our needs but still get so much from watching her. I love both of your channels and find you to be motivating. I only have KZread as I just don’t want to be pulled into other platforms. I appreciate you taking the time to post on here.

    That's a great idea to get the only the cuts you want to eat. I like to have them quarter the big ham piece and give it to me fresh, with no curing. Then for special occasions I can salt my own ham in smaller portions and which tastes so much better that I can't stand regular ham anymore.

    I love Becky’s channel. We have freeze dried chili, split pea soup, spaghetti sauce, meatballs, ground beef, vegetables, lasagne and many other easy dinners and items for quick easy go cooking!! In addition to onions and garlic and homemade beef and chicken broth to powder. Becky has been such an inspiration for us and we never miss an episode!!

    I absolutely love this podcast..I love Becky's channel and now I found a new channel!! Also I just want to say, both of your skin is just flawless and beautiful. I'm thinking it's probably because you both eat food that is organically grown and not all processed nasty food!! Definitely encourages me to eat better healthier sourced food. I've been having some skin issues, not on my face, but some other parts of my body and I'm trying to be more mindful of what I'm putting into my body now thanks to people like you guys.     When my partner and I switched to no processed foods, his psoriasis started clearing up. His skin has never looked better! Definitely give it a try…took about 2 months for him to see the differences start. Good luck!!!!

    Be sure to switch out what u put on your body as well. Inhalant scents, detergents, topicals, just all self care products.

    A wonderful idea for those pork shoulders, carnitas. I cube up the pork shoulder, season it heavily with paprika, cumin, garlic, salt and pepper. Put it in the crock pot with 2 limes, 2 oranges (cut in half and juiced), and cilantro, cook on low for several hours. At the end I break up the meat into bite sized pieces and put it on a cookie sheet under the broiler until it has crispy edges. It makes a ton of meat so we have tacos for dinner and then freeze into quart sized bags. The kids typically pull it out for quesadillas, nachos, burrito bowls or just to throw into scrambled eggs for lunch or when mom and dad have a date night and they are in charge of dinner.

    Sounds perfectly delicious... I wonder if pork shoulder can come cut in 1lb portions as to be on the quick cooking list, like ground meats are? I do portion out a big meat into freezer portions... Hubby prefers switching up meats. Otherwise, I'm great at eating tacos for a week

    In my opinion the best homestead on you is Living Traditional Homestead. They have been at it for years...from planting from seeds, chickens, rabbits, pigs, and cows. They are simply put amazing.

    Love the program! When we get a hog butchered, in lieu of ham (not our favorite either) we have pork cutlets made. After bacon, it's our favorite cut. Flour, egg, panko breadcrumbs, quick browning and into the pressure cooker for 15min. 12.25.2023

    I know some just dont like getting things like the pork shoulder or the ham cause its such big cuts of meat so you dont cook them as muchand as a resukt you have several in freezer that you still have to deal with and you get burned out on them....just when you bring them home, cut them in half and repackage and freeze. Smaller portion is easier to deal with, less overwhelming, less nights of having to reinvent a way to use the leftovers...instead of eating that ham for 4 or 5 days, cut it down to 2 or 3 days.

    Such fun having both of you together! I have been watching Becky from her beginning & Lisa since she was selling pillows & embroidered items out of her little home.I don’t have a garden & I don’t cook but I enjoy watching both of you I do sew and when I was younger made all my own drapes and curtains. At 71 I am a stay at home Grammy who did early preschool for all 4 of my Grandkids ages 2-13 . My big passion now is quilting. The grands renamed my craft room the classroom so I share my space with them .

    Put your pork shoulder in the Instant pot and it really does make it feel like a way more accessible meal to make a bit quicker. Especially if it is partially frozen, just get it cut down enough to fit in, put it in for about 80 minutes. There's also just something that it does to the meat to make it so tender, you will never roast or crock pot it again.

    I love that you both are homesteading. You both talk about freezer storage. I just recently lost 3 freezers FULL of food, due to a bad storm that took out our power for a week. I couldn't trust that the food had not defrosted, especially since we had not opened 2 of the freezers. So we had to toss it. The insurance company would only cover $!,000 for the loss. So now I am slowly refilling them, but nervous about another storm. We live in Oklahoma and it has sometimes taken more than a week to get power back in some places.

    Love you Becky. I started watching your show when first start it. You're so much amazing you show us how to garden. Your flaws your goodness of your garden. As well when you're in the kitchen cooking. How to can our food. As well how to restore it for the year. You let all the fans know if you're feeling good or not. You have share your family and Josh's family with us. You had your sister your brother-in-law her young'uns on your show. You had your sister-in-law as well as your mother-in-law and couple your friends from out of town. I love with you and Josh have done with your new place.     Great to see you both together. Lisa you were spot on to say Becky is relatable. We all make mistakes in the kitchen and she embraces them and rolls with it.     Hello lisa, I clicked because u saw Becky And had to see what y'all were talking about! Omgoodness the stuff you eat lol! We raise pigs.... and first time I tried to do all the cuts with 3 hogs.... I literally have away 5 hams. Now sausage, bacon, rubs, and last 1 ham per 3 we butcher. It's really what you and yours eat.

    I am vegetarian and for bulk 9:20 eeze in glass ( such as jam jars). NEVER fill jar to the top since food expands in the freezing process. Just meal plan and take jar out the night before to thaw and no risk of food contamination from plastic.
