My best guess is that the Gmaj7 he plays acts as some sort of tritone sub for the Dbmaj7.

It's a tritone substition on the Dbmaj7. He does basically the same thing in bar 15 (:34) by outlining Amaj(b9) over the Eb7(b9). From a music theory perspective it sounds so cool because so much of the solo is just grooving on the Ab pentatonic and then he throws in these two curveballs with the tritone subs - really underscores how cool a tritone sub can be.

it is a tritone sub, but the idea is that he's simply continuing his phrase which he started bar before.. I don't think here is the moment where he actually pressed Gmaj7 and then thought about what to play. nah.. he had this ending of his melody which appeared to fit Gmaj

He treats the Dbmaj7 as Dbm7 instead, continuing the progression of ascending minor 7 chords.

He is highlighting the #9 and b9 sound over the Eb7 chord in bar 39. Both of these chord tones are found in the half/whole diminished scale and altered scale.
Does anyone have midi that could chnage it like that

this one is obviously not about the notes.. neither exact rhythm.. just listen. it's simply about feeling the groove - you can't transcribe that in the score :) there is nothing fancy in the notes or rhythm that he's playing here

there is tho. so much creativity texturally and every time theres the 2-5-1 in AbM he plays it a little more out with interesting substitutions. not necessarily fancy but really accurate and fitting
