Lovely quick meals again Gary. Just made one this week - random idea I came up with & it turned out lovely. I just bought some chicken breasts, a jar of pesto & a mozzarella ball, drain & slice the mozzarella ball, slice the chicken breast almost in half (but keep it attached, butterfly it!), I just used 2 teaspoons of pesto & rubbed on one side of the chicken, put a few slices of mozzarella cheese in, then I wrapped some bacon around it & held it together with a cocktail stick. Popped it in the oven, served it with wedges & salad! Lovely! Almost like hunters chicken but with pesto. Your pesto dish just reminded me of it but deconstructed! I wouldn’t touch liver & bacon if you paid me 😂 but my Dad is the same, loves it on the odd occasion! You’ll be running around like a headless chicken on Christmas Eve Gary lol. At least you’ve got Christmas off though to enjoy with the family. Take care x
