Triple Cooked Garlic Parmesan Chips
Ingredients -
5-6 - Large Potatoes, Washed
2 tsp - Cornflour or Starch
Salt to Taste
Oil for Frying
Garlic Parmesan (Optional) -
3 Tbsp (42g) - Unsalted Butter
2 - Garlic Cloves, Finely Chopped
2g - Flat Leaf Parsley, Finely Chopped
Salt & Cracked Black Pepper to Taste
Parmesan Cheese to Serve
Method -
1. Wash and slice the potatoes into batons as thick or thin as you like. I prefer shoestring thickness. Soak in ice-cold water for 1 hour. This helps remove excess starch. Drain and pat dry.
2. Place the drained potatoes into a pot of boiling water and cook for 4-5 minutes or until the outer shell of the potato has softened and can still hold its shape. Remove and drain. Pat dry. An optional step is to place the potatoes in the fridge or freezer overnight to cold dry. This will create the best fry.
3. Now, let's move on to the garlic butter. Add the butter to a pan over medium-high heat and allow it to melt. Lower the heat to medium, add the garlic and flat-leaf parsley, and mix to combine. Cook for 1 minute and remove. Keep warm.
4. Lay the fries on a dry tray and add the cornflour or starch. Gently mix them to coat the potato.
5. Bring a pot of oil or deep fryer to 160.c-320.f. Fry the fries in batches for 5-6 minutes or until lightly golden and starting to crisp. Remove and place onto a wire rack. Repeat with the remaining batches. The fries can be cooked asap or can be placed in the fridge or freezer. Same step as stage 1.
6. Increase the oil temperature to 180.c - 350.f. Fry the fries in batches for 3-4 minutes or until crispy and deeply golden. Repeat with remaining batches. Add the crispy fries to a large mixing bowl and season well with salt and cracked black pepper.
7. Pour the garlic butter over the crispy fries and grate in parmesan cheese to taste. Mix well and serve with Outback Sauce. Dig in.
Outback Sauce
Ingredients -
1 - Whole Egg
3 tsp (15ml) - White Vinegar
1 tsp (10g) - American (Yellow) Mustard
150ml - Vegetable Oil
1 Tbsp (20g) - Tomato Ketchup
1 Tbsp (20g) - Horseradish
1 Tbsp (20ml) - Worcestershire Sauce
1 tsp (2.5g) - Smoked Paprika
1 tsp (2.5g) - Garlic Powder
½ tsp (1.5g) - Red Chilli Powder (Optional)
Seasoning To Taste
Method -
1. Add whole egg, white vinegar, yellow mustard, and vegetable oil in a tall container. Blend with an immersion blender until emulsified. Add all the remaining ingredients and blend again until combined. Store in the fridge until ready to serve.
Please note -
I say the garlic butter and parmesan are optional, as adding liquid to these chips can ruin our effort to get them crispy. It tastes incredible, but remember that the chips won’t hold their crunch long, so you must eat them fast.

Beautiful looking fries mate!
I'm doing this with a slight twist: as some chefs recommend for fries and also fried potatoes I add some vinegar in the cooking water. It'll not taste vinegary, but it does create a rougher surface. I use russet potatoes and skip the starch. Greetings from the far north of Germany!

Baking soda does the same thing. About half a teaspoon per pot.

Cant beat homemade fries. Somethjng i love to make regularly. I've got a mandolin or whatever its called. A wee contraption that has a grid that i push potatoes through to produce perfectly cut fries in seconds. I highly recommend buying one as it saves so much time and gets them all perfectly even.

I want..I want...😂😋😋😋 They sound so so crispy...I still make those potatoes with duck fat recipe ( ofcourse i use ghee) but now have to give these delicious fries a try...
I was thinking recently that I don't have a good fry recipe and still rely on fast food fries. This recipe will pair perfectly with your burger or patty melt recipes to create a much better version of a fast food meal. Thanks so much for this. Gotta give this a try.

It’s the same as fast food fries there still cooked in vegetable oil
for chips i'm lazy so i just cut them then cover in olive oil, salt and thyme and toss before chucking into airfryer. Thoughts?

Damn, those look stunning, delicious. Cheers again chef. For the frying oil, waaay back I remember it was always lard used in the old days. After use, mum would let it solidify, ready for the next use. Interestingly, absolutely no smell, unlike the veg oil here. There seems to be a fair bit of internet chatter suggesting lard is, in crucial ways, more healthy than today's alternatives...e.g. lard oxidises only a little whereas veg oil etc oxidises much more thus releasing harmful free radicals. As long as frying, in general, used in moderation (as always) I'm thinking that lard should be more considered when frying. No smell, 'healthier' and improved taste seem good plus points. Many chip shops and good restaurants secret tool is in fact, lard ;)
could you use lemon or lime juice even to replace the vinegar?

Why do you triple or double fry foods for extra crispiness instead of doing it in one go?

Sitting here at 2am, stuffing my face with cheese, and I had to watch this. BIG MISTAKE! Now I want freaking chips! They looked seriously good. We used to do double fry chips. I like the sound of triple. These days we tend to do cold cook chips. They are insanely good! I have to say, I was concerned about the amount of oil you put in the pan. If I did that, it would have well and truly boiled over when I put the chips in, and made a heck of a mess!
