今晚,来看看夏夜的璀璨星河吧~ 银河羊羹: *豆沙制作 1、红豆提前浸泡12小时;清洗干净后倒入锅中,加入没过红豆的清水煮沸,再加入没过红豆的温水,大火煮沸(此步骤重复2次,是为了更好的去除涩味),转小火焖煮1小时。 2、将煮好的红豆放入滤网中刮出豆沙,豆壳弃用。 3、刮出的豆沙沉淀静置10分钟,倒掉上面一层的水,底下豆沙装入纱布袋中,挤掉水分。 4、起锅开中火热锅,放入30g猪油,融化后加入20g白糖炒化,再放入挤掉水分的豆沙,继续炒掉多余水分,盛出冷却盖上保鲜膜保存。 *整型和冷冻 1、取50g红豆沙放入锅中,加入100g凉白开或矿泉水中小火不断搅拌,煮至冒烟后关火,倒入碗中。 2、10g吉利丁提前泡软,放入锅中隔水融化,再倒入第一步煮好的豆沙液中,拌匀。模具用盖子使其倾斜,倒入豆沙液,进冰箱冷藏1小时。 3、70g牛奶小火煮至冒烟后关火,放入10g提前泡软的吉利丁片,拌匀放凉。取出冷藏好的豆沙层,将模具平放,倒入牛奶层进冰箱冷藏1小时。 4、15朵蝶豆花用泡入150ml开水,待其颜色慢慢变深。 5、另取一个容器,倒入15g热水和2g蝶豆花茶搅匀,放入5g提前泡软的吉利丁片拌匀放凉。取出冻好的牛奶层,倒入浅色蝶豆花层冷藏30分钟。 6、10g吉利丁片提前冰水泡软,将第4步杯中的蝶豆花取出,趁热放入吉利丁片拌匀,放凉。取出冷藏好的浅色蝶豆花层倒入蝶豆花层冷藏1小时。 7、取出冷藏好的羊羹,用热毛巾在四周和底部敷一下,四周划一下,脱模,最后撒上椰蓉和食用金箔。
