This carrot cake is, to me, perfect: chewy dates instead of raisins, and toasted nuts ON TOP instead of in, absolutely zero pineapple in sight, and you don’t need a mixer. It’s sweet but not too sweet (it’s…sweet enough, even), dense but not heavy, and has so many carrots, you might not believe it will taste good (but it truly does). It doesn’t even really need frosting, although I do understand the sentimental attachment-and it makes it look nice, too. It also doesn’t really need to be served cold (it’s perfect at room temperature), but at this point I’m hoping you can just trust me on these things. Refrigerating it does give it a dense, custardy, almost fudge-like texture that feels simultaneously luxurious and healthy, screaming “mid-day snack” or “this could be breakfast.”

Thank you too to the producers and all the team for listening to the comments from us who couldn't really focus on the previous videos with the style used before, and making the changes. This was so fun and easy to watch and follow. Thank you for another great recipe video Alison and for not taking the comments personally. I never really comment but wanted to say that: 1. I don't like (and have never liked) carrot cake but I really felt an urge to make this carrot cake and I like it. A lot. 2. A cake that tastes better eaten cold from the fridge is a thing of joy to me. 3. I very successfully halved this recipe to make a slightly smaller cake, using 2 medium eggs instead of 3 large, and adding another 10g of flour. 4. Thank you.

So I thought that cold cake would be dry and cold frosting would set hard. Not here. Because there's so much carrot, the cake stays moist, almost mousse-like, the frosting buttery and smooth. It's heaven. And for people like me, who like to eat cake right through summer, this is now a go-to.
As someone that once consumed carrot cake cold while hungover, can confirm it is indeed better colder.

Funnily enough I like raisins in savoury applications (good balance to salty and acidic ingredients) and absolutely despise them in cakes (where I find them weird, unwelcome and oddly bitter).
After grating my knuckles off for years, I started using a cut glove if I have to use a grater. For grating large volumes, I use my food processor.

I just made carrot cake last night and I agree, it taste best overnight in the fridge. Also because I live in a stupidly hot tropical country and I skipped dinner so I could have cake for breakfast.

Wonderful vid! Beautiful cake! And yay…I agree totally with Alison about not peeling carrots! We all learned in 8th grade biology that most of the nutrients are right under the skin. Why would you get rid of that? I use a stiff vegetable brush & scrub vigorously. Your carrots & dates idea looks wonderful to me, but sadly my DH won’t eat dates. (He puts up with me being mostly vegetarian.) Actually, I like raisins, but usually use more interesting things instead. And I love nuts in everything! Love your version, tho & having it cold is genius!

Among the many Hard Agrees for me in this video: 1. I never measure stuff when cooking, but a kitchen scale is indispensable for baking. 2. Why sift when you can whisk? 3. No one will notice if you don't peel your carrots (esp. in a context like a carrot cake). Mild disagree: A raisin is a good surprise... especially a golden raisin!!
I think I would shred the carrots on the small shred or will that change the cake consistency?

I can eat carrot cake warm or cold, anytime of day. I love the dates and pistash, this sounds like a great alternative to my walnut, raisin, pineapple additions. 😊 P.S. The store looks amazing.

As someone with a nut allergy, I LOVE that nuts are optional (sprinkled on top)! Carrot cake is my favorite ever but so hard to find without nuts. Can’t wait to make this! Is there anything else you recommend sprinkling on the top instead of pistachios? Or just keep plain? Lmk. Thanks :)
I am so with you on the nuts in cake thing. I always ask and if a cake has nuts I don’t order it….have learned my lesson from unglamourously picking nuts out or even worse spitting them out 😂

This is why I have the shredded processor disk and you do it really quick. I can't box grate cups of carrots. But you do then have to clean the processor :(
