① “Ima-ya Hamburger” has been operating in Fukuoka City since 1972.
The owner, Katsumi Imazaki, is 77 years old at the time of interview (September 2022).
It has been 40 years since she started her business at the top of Nishi Park in the city.
She prepares the food at 5:30 a.m., opens the shop by herself, and greets each and every customer warmly as they come to the mountaintop shop.
All hot dog style hamburgers are handmade.
It's a type of food you won't find anywhere else, and can truly be called Fukuoka's soul food.
Of course, the taste is unmistakable.
In order to convey this flavor, we are currently accepting apprentices and teaching them everything from purchasing ingredients, preparation, and making methods, and currently six stores are operating as Imaya hamburger branches.
Furthermore, we are holding up a sign for a children's cafeteria and providing support to the homeless people who come to the park.

③Fukuoka Dazaifu's soul food "Umegaedamochi".
It is also said to prevent illness. Lord Michizane died in 903, so this is a Dazaifu specialty that has been around for over 1,100 years.
At the long-established Yasutake Honten, they are made using a casting machine and baked in molds with plum patterns. Yasutake's specialty is to wrap the red bean paste in a mochi skin, wrap the bean paste in the dough, and then bake the surface of the skin until it becomes fragrant, making it chewy on the inside and crispy on the outside. It was renovated in 2021 and the atmosphere of the past has deepened.
