500g glazed fruits
200g raisins
200g wallnut
1/4 cup rum
and then,
200 grams (1 cup) brown sugar
4 large eggs
2 tablespoon (1/8 cup) molasses
2 teaspoon vanilla
270g (3 cups) All-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1 teaspoon salt
1/4 teaspoon nutmeg (optional, not a fan)
1/4 cup rum + 1/4 cup fruit juice (orange bottled juice)
for garnish
50 grams walnut
red and/or green cherries, or
red and/or green sugar palm fruit (kaong)
9 in springform pan, lined with baking paper and oiled.
Bake in a 130-150 degree Celsius preheated oven for 2 hours or until toothpick inserted in a center comes out clean/dry.
