Kirsten is chocolate considered a dry ingredient because the internet said it has not water contents and also because it has the same effect of turning into a paste with the addition of water (seize) like how a dough forms with water mixes with flour. Also is there a difference between wet and moist ingredients like oil/fat and water and if there is, is chocolate a moist ingredient if its not dry. Is the reason chocolate seizes is because water makes syrup with the sugar and attracts the cocoa particles (that's what the internet told me)
