Chinese and english recipe/ instructions below :
材料:
1.大約 200 克 = 7 oz, 中蝦肉
2. 1 片薑
3. 半條青蔥
4. 2 個紅蔥頭
5. 1/2 茶匙鹽
6. 1 茶匙豆粉
7. 1 茶匙麻油
8. 3 茶匙油
9. 1 粒蒜頭
調味料:
1. 2 大量匙蛋白
2. 1/4 茶匙糖
3. 1 茶匙雞粉
4. 1/2 茶匙白酒
5. 1/3 茶匙日本魚粉
6. 少許胡椒粉
7 個蝦醃料:
少許糖, 鹽和胡椒粉
Ingredients:
1. around 200 grams = 7 oz, medium shrimps
2. a slice skinlesss ginger
3. half spring onion
4. 2 shallots
5. 1/2 tsp salt
6. 1 tsp corn starch
7. 1 tsp sesame oil
8. 3 tsp oil
9. one clove garlic
Seasoning:
1. 2 tbsp egg white
2. 1/4 tsp sugar
3. 1 tsp chicken powder
4. 1/2 tsp White wine
5. 1/3 tsp Japan dashino- moto fish powder
6. a pinch of pepper
7 shrimps marinade:
a pinch of sugar, salt and pepper

    I have searched many, many recipes for a great shrimp cake. I have watched so many videos, and several top rated Chefs have come close, and some of them were good, but never quite right or great. Now I find a Grandmother who knows. Even though I have not made them yet, I can tell this is the lady who knows. I don't even need to know the language, she was able to tell her story and share her techniques masterfully. I learned most of what I know of cooking by watching my own Mother working in the kitchen. It is by far the best tutorial on shrimp cakes that I have found on the internet. You can tell that she has been perfecting her recipe and technique for many years, and I feel honored to be a student of her wisdom. Please share this with her, as I cannot speak her language, and it is important that she know how valuable the wisdom and knowledge are to those of us lucky enough to learn from her. I have my shrimp, but now I have to go to the market for some of the other ingredients. One thing I have learned is to follow what the master says first, and change nothing until you perfect that. I look forward to tasting these and am very grateful for her sharing her recipe and techniques with us.

    This looks GREAT!!! What a trick about smashing the shrimp before cutting it up. I grew up near the Gulf of Mexico, so I've cooked with shrimp for a long time and never knew to do that. Also, glad I found those captions. Subscribed and will watch more. YUM!!

    my friend who taught me dumping also said it's better to stir it one way too. But it doesn't matter if it's clockwise or counter clockwise, coz one way stirring may yield a more silky texture in meat, whereas random stir will make a thicken texture. I guess it applies to shrimp too :)
