Fried Green Peas / Fried Mattar
Ingredients:
• 1 Cup Dried Peas (Blue Boiler Peas)
• 1 Tbsp Baking Powder
• Oil For Frying
• 2 Cups Water (Soaking The Peas)
• Salt To Taste
Ingredients:
1. Take a big dish, add dried peas and water , cover it and let it soak for 5 - 6 hours or overnight.
2. In the morning , drain all the water, add baking powder and toss it , to coat it well.
3. Place a clean tea towel on the bench top, spread the peas on one half of the tea towel, fold the tea towel over to cover the peas and dab it with your palm to soak any excess water and let it dry for 30 minutes.
4. After 30 minutes, transfer the peas into a dish and it is time to fry it.
5. Place a wok on medium heat, add oil and heat it. You will also need a perforated spoon, a strainer and a plate lined with some paper towel to absorb excess oil after frying.
6. When the oil gets hot, add half the peas , give it a mix and fry it for 4 - 5 minutes or until the bubbles have gone down and the peas are floating on the top , stirring it frequently. You can also check to see if the peas are ready by taking some peas out, letting it cool down slightly and giving it a bite to see if it is crispy.
7. After 5 minutes, the bubbles have settled and the peas are floating on the top, take them out , put them in a strainer, shake the excess oil off and drain them on some paper towel. Repeat this until you have finished frying up all the peas.
8. Transfer the peas into a big dish, add 1 teaspoon of salt and toss it well so that the peas can gets coated with the salt and it is ready to serve.
9. Crispy fried peas or fried mattar is ready, store it in a sealed container and serve it to family and friends.
10. Enjoy.
Note:
1. You can also add chilli powder and 2 cloves of grated garlic or according to your taste.
2. Baking powder will make the peas soft and crispy and also retains the green colour.

    Dear English, Yes you can omit it. Baking powder makes the peas soft and crispy and also retains its green colour. You can also add 1/4 teaspoon of baking soda while soaking the peas to absorb excess gas as well. Regards Anita.

Defrost the peas first in some water, drain it and let it dry in a tea towel for 15 minutes before frying or you can roast it in the oven or air fryer. To make it spicy, add chilli powder and some crushed garlic while still hot. To roast it in the oven, add 1 tbsp of oil to 2 cups of peas, 1 tsp of salt. 1 tsp of chilli powder and 1/2 tsp of garlic powder and roast it at 180 degrees for 15 - 20 minutes shaking the pan to stop it from burning or until crispy.
