    I really appreciate the vegetarian dishes. We are growing tomatillos for the second time this year so another tomatillos dish is very welcome.

    I grew up thinking American ground beef tacos were the best thing in the world. Every birthday, my parents would ask me, "would you like to go out to eat?" or "you don't want ... steak?", and I would tell them every year that I wanted homemade tacos (which at the time was the only Mexican food I had heard of). So imagine my excitement when I find out that one of the leading authorities on Authentic Mexican cuisine is interested in teaching us about the extensive food culture and how to cook literally every well-known Mexican food under the sun, and that Mexican food is so much more than tacos and it's all delicious. It's the most incredible, high quality, free education that is available anywhere. It's insane that his subscriber count isn't in the millions

    Tart, hint of sweetness, bright cilantro, warm gooey fresh cheese. That's a terrific recipe! What a great thing to serve at a small get together with friends: drinks on the patio, sitting around the molcajete, dipping, talking, laughing and watching the sun go down.

    I was so psyched at the molcajete! I usually make Panela molcajete when I’m making other “antojitos”, which usually include potato quesadillas. Don’t throw those potato peels away! I fry them to make them crispy and I serve them on top of that cheese and salsa verde molcajete and it gives the tacos extra crunch . It’s so delicious!

    I particularly like this because I find I often have a hunk of queso fresco in the fridge that needs to be eaten before it goes bad-this is a terrific solution to that.

    Rick is queso fresco the same as a paneer or otherwise simple homemade cheese? Not too many options here in Australia for fresh Mexican cheeses

    It's like a filling. At the end he suggested serving with warm corn tortillas that you spoon cheese onto and enjoy. If you didn't get to the last 3 or 4 minutes of the video, I recommend it!

    I've been making salsas and guacamoles in my molcajete from Alfarería Tlaquepaque in Puerto Vallarta after getting your first cookbook in 1996. I've had 'sizzling molcajetes' in restaurants and taquerias, but have never thought to use my own at home, so something new to add for my next family dinner. Any advice on the heating process, or would you not recommend this for a molcajete used regularly?

    He has a few videos on making acid set cheese at home. Your grocery may have rennet tablets for sale. 'Joy of Cooking' has some simple but tedious cheese making recipes that I've tried with success.

    I think so, or if you can find haloumi. Or maybe a low moisture mozzarella could work.

    You could substitute cubes of tofu for the cheese, and it would be just about as tasty and better for you and the planet also.
