Everything about this noodles dish (肥肠粉) in Chengdu is gentle: the smell, the texture of the noodles, the mild spiciness, the taste of the meat and the vegetables. The first thing you will notice is the smell of slightly burned chili in the air - which is one secret to the extraordinary taste of the noodles: their chili is dried and wok fried. - Sweet potato noodles with pig guts soup base.

    As a Chengdu grown up Chinese, I came here just to spam that like button. This is one of the all-time favourites back to my childhood. The combination of intestine and glass noodle may look a bit low class, however the taste is heavenly delicious with that crispy pan-fried meat pastry puff. If you know what I mean.:)

    Literally translate, this is called “pork intestine vermicelli” in Szechuan. My personal favorite. It tastes fantastic. This restaurant is one of best among natives. So sad I could not find this food (authentically made) here in US, even in NYC or LA. Will keep searching it.

    As a person who loves Chinese food and culture, i just don’t get one thing about sanitary. I don’t mean any disrespect but is it laziness or what? Are customers alright with such surroundings? With just little effort to be hygienic, things would be a lot better for Chinese. I mean smoking while cooking? Its just unprofessionalism and hard to earn respect.

    I agree, it's a problem in most parts of undeveloped asia, China has just developed in recent decades so old unhygienic habits still persevere despite the wealth but the younger generation are learning more and more and hopefully in a few generations things will be better.

    just to clarify these are not noodles but a kind of vermicelli, from the colour it is most likely to be sweet potato flour, and yes the meat part is intestines, most likely pigs, they may not sound too appetising but as you can see, combined they produce some of the best eating around,

    The Japanese also use these parts, just not as openly. Properly washed intestines aren't harmful. They appear to be washed well here. Rinsing hem and boiling them is typical in sausage making.

    @Alex Han and Wil Woo: just to clearify the instestine questions you were discussing. What ist eaten here are pork instestine including everything but the content :), so it is clean inside. What we in the west, and in other parts of the world, use as casing for sausages, is only the outer skin of instestines, so the fat and everything else is removed, what is left is absolutey tasteless. Depending on the type of sausage you wether eat it, e.g. Frankfurter (Wiener) or Bratwurst, or remove it e.g. Münchner Weißwurscht. By the way, the most expensive case is from the sheep and used for sausages of the size of Frankfurters. And of course there are artificial skins also available.
