    I think the emulsification problem comes from dry pasta, especially the kind extruded with teflon dies. I've never had any problems with handmade fresh pasta.. I think the really thick pasta water eliminates the clumping..

    If you're already grating the cheese in the food processor, why not add the water and make the paste in there? Update: I've been making it that way, and my cacio e pepe has been much better.

    As an Indian, this is not advisable method of preparing chow-mein without proper veggies and masalas, IDK how's this going to taste...! Definitely not spicy? Probably sweet?

    Thanks for your recipes and videos. One suggestion though.....please please please stop touching your hair when you cook! Put it back if it bothers you that much.
