Food Lab Basics: POV French Omelet

This is a classic French omelet, which I like to think of as very soft scrambled eggs that are giving themselves a hug. The technique I use is as classic as it gets. You've probably seen that video of Jacques Pepin doing it way better than me. He's a master.
It's not easy the first few times you do it, but the good thing is that even if you mess it up, you still end up with a decent breakfast, and the ingredients are inexpensive. You’ll want a decent nonstick pan (mine is a 14YO Calphalon SLIDE. Still in good shape. If you have a very well seasoned carbon steel omelet pan that works too (but chances are if you have a pan like that, you already know how to make an omelet).
In France, omelets are frequently eaten as a light supper with a salad on the side. If you do as the French do, you get two opportunities to practice it every day!

AlinzPark Hes right tho. Most American don’t cooks eggs like this so if you good up it’ll be the standard scrambled egg we’re all used too.

Quickman may win i have travelled around the us, europe and asia and i tried to eat with locals as much as possible and got invited a lot of times and europe/asia had way better food than the us. And the most important thing for me is bread. American bread sucks and thats a fact. If you ever tried german,french or indian bread you wont go back

@@lm10n1 one thing i don't understand about western cuisine in general is that they seem to put sugar into everything. everything is sweet, they even eat salty ham and cheese sandwiches with jam or powdered sugar (monte cristo sandwich), unimaginable to me. and you're right about the bread!

Dog being fed got cut off, I'm mildly upset now.
The few things that made me subscribe to this channel are: - Cooking with enthusiasm, in your home, and I get to watch you wander around in your kitchen, just like any other cook do when they're at home. So, I get to watch you think, wonder what you want to pick up from the fridge.. -the silence in your videos, (not that I don't like you talking 😉), but the simple sounds of walking around in the kitchen, the crackling voices of the pans and plates.. -watching how your amazing kitchen is organized, and watching you opening your drawers as if I was opening my drawers.
Currently, 1:35am in the UK and this has got me salivating.

Hi J. Kenji! I just wanted to give you props for the way you communicate technique and make things approachable. I watched quite a few Omelette videos including some fairly famous french chefs breaking it down, and only after watching your video a couple times was I able pull off an omelette that I could be proud of. In particular your use of chopsticks and adding diced butter to the eggs, both of those things really helped. The way you explain stuff isn't overly complicated but is specific enough to make a huge difference. You're doing great stuff on the platform and as a home cook who is learning I wanted to express my gratitude!
Good to have this style of video back Kenji! I really love the fact you can pack all this information into a short video, makes cooking seem way less intimidating. Keep it up

I watched Pepin's video this morning and tried to make this for me and my wife and failed miserably, just one hour before you posted this video (I'm in Australia, so was posted my Sunday morning). Seeing your video, I didn't have my pan nearly hot enough because I took about a minute to cook the eggs: my eggs never got a good base in my first attempt and ended up scrambled, on my second attempt was better but a layer of eggs stuck to the pan as I tried to remover it (I used a nonstick skillet with butter, so was user error). These videos are amazing, thank you!

having so many ingredients means you can isolate for 5 months and never run out of delicious stuff, i envy you
i wouldn't like it like that xD i'd add more butter before (to avoid having to add it later) and cook them a little bit more ( to be sure for safety reasons, expecially in Europe where eggs are not pasturized"?" is that the right term?), pepper salt or prezzemolo for seasonings. Such a blessing in modern times kids and young adults without good parents and opportunities can learn from people like you. What an honor and a blessing!

This French omelette tutorial is the peace treaty that resolves the dramatic plot thread that first began when Kenji dropped that hot Marco Pierre White diss in the fried egg video 4 years ago. Definitely one of the best story arcs on KZread, in my opinion.
This omelette is really really good, one of my greatest mentors use to say, an omelette is the business ticket of a cook, you can tell a lot of someone cooking by the way they make omelette.... he is french of course :)
