You never quit. You must be so proud of yourself. That said, I have to add that I love how you edit your videos. But my friend this time was not just the filming and editing it was the MUSIC! How it varies depending on the situation... I was so into music that didn't realized how many times the pancakes didn't flip... Awesome video as always!!!

I suggest that you use a little more oil. Don't be too hard, on yourself most of us can't get the first pancake right either. I myself have a hard time flip them or an omelet properly. I'd like to see you try making a Dutch baby pancake, they are real easy. You take 4 large eggs, 4 cups of flour and I think for cups of milk. Take a heavy cast iron skillet, add 1 cup of butter and put it into the oven while it preheats to 425 F degrees. While it's preheating you whisk the flour eggs etc in a blender. When the oven is preheated you pour the batter into the pan and bake at 425 f for 30 minutes. It will smoke and maybe set of your fire alarm. It will get golden brown on top and puff way up then collapse like a souffle. You traditioly serve it with powered sugar dusted over it and a squeeze of lemon. Of course you can top it any way you want. I like sweet not salted riccatta, with molasses, ricotta and fresh or frozen fruit. Also almond or peanut butter and maple syprup.

Here you are. Finally, I can watch your entire video about pan cake making. Nice work, I enjoy watching the video. Very intense, my heart keeps beating faster and faster each time you flip the pan cake. 😂

I think cause you want to keep as much of the air in the batter as possible. If he lets it’s sit it won’t be fluffy
I feel like I just watched you have 7 existential crises at the same time lol. I love how when I watch your videos, I'm not just following a recipe but also going on a journey with you in a way, because you show us the mistakes as well. Also, your perseverance is remarkable
watching as the hope dies in his eyes as failure upon failure continue to pile on is relatable af

I really really wanted it done on the first try 😭
Maybe in the future you could just make one pancake at a time until you successfully made it work. You'd have twice as many chances to figure it out with each batch.
Your channel popped up in my algorithm couple days ago and I've been binge watching...I'm newly subscribed, smashing the like button for each video I watch because they're all worth it. The dedication and perseverance you have is inspiring. I love your videos recreating Julia Childs recipes. I remember watching her on TV when I was a young girl back in the 1970's. My Mom had some of her cook books, but I could never follow them (too many references to other recipes to create 1 recipe). You've really done such a great job, 👏👏 I only wish we could all sample those recipes 😋 Looking forward to more binge watching your videos 😊

Thank you, Christi!! That means a lot :)
I’ve never heard a Canadian swear so much in my life… It’s hilarious 😂 😂😂 ( I’ve been to Calgary ( Banff actually) and never heard anyone swear, I also have a Canadian mate here in the UK and hardly ever heard him swear. A real potty mouth, but I can’t get enough of it. Please don’t stop, it has me in stitches. PS, I love the show.
I recommend you add like a couple teaspoon of water to the frying pan, because the steam will help cook the pancake entirely, so when you flip it to brown this other side will be much easier.
Again, I am amazed by your persistence and dedication. There are two things most recipes will not tell you, however. 1: you need to add some kind of raising agent, like baking powder, to the egg white. Second, it takes a slightly larger amount of fat/butter, to properly conduct the intial heat and seal the bottom. This way, you can cook it longer on a much lower heat, ensuring that they will cook all the way through without burning. How I know this? I adjusted about half a dozen recipes, until I found the one that worked with my type of pan. So yes, I can feel your pain and frustration
The music and editing are everything - and the fortitude.

I tried a recipe tonight that went super well. Add water to the pan to create steam! It worked so well.

the secret ingredient is a commercial grade stabilizer

Exactly this. I can't remember the exact one that's used in Asian cuisine but I've been told it's not sold in the US. It's just a food safe stabilizing agent.
@markntexas8265

I had no problem but I used a ton of clarified butter in a Calphalon non stick griddle the comercial stablizer is only needed to keep the batter from collapsing waiting for orders or large batches corn star h will do the trick just like we used for soufflés hope that helps
Tip: if you want fluffy pancakes, add a little less than a tablespoon of melted butter. It works like a charm.
I just recently found your channel and have to say that I am so incredibly proud, impressed, vastly amused and very, very entertained by your persistence and enthusiasm. Your humor and honest reactions are wonderful. I hope your videos inspire people who never start cooking, baking, life, whatever, to give it a go. Thank you so much for your uploads.

New subscriber here and love your culinary innocence. Using words like 'flipper' for spatula makes me giggle. Like any trade or art, the right tools make all the difference. I know you've improved on your knowledge since this video cuz I'm binge watching and now currently on the Julia Child series.

Jamie, just came across this old video having been watching many of the more recent ones in your wood toned kitchen. This is such a wonderful example of the persistence you bring to your task of mastering cooking skills. Even when completely frustrated, you are back at the task in the morning with three more ideas of what is causing your "flipping" project. (Pun intended). This look back shows just how much you have developed over the ensuing years. Keep the shows coming.
I would of been in tears at attempt number 2. You certainly are good at egg separating tho.

You just couldn’t see the tears
i wouldve buttered the pan more than you did that may have helped with the flip But Im going to try this recipe over the weekend
Jamie, you spiralling into madness to vivaldi was adorable 😂 these pancakes are not worth the trouble when a pancake is really just a way to deliver your native country's greatest export, maple syrup, to one's mouth!
This video is a masterpiece man wow ..loved it. The music was like a soundtrack to your movie, the editing was amazing…and simply the fact that you had such a vision of what and how to do this, no matter how many times you tried every time you tweaked it to make it better it’s just so cool I love your attitude towards your cooking

I feel like a griddle would be easier to use if you're trying to make several pancakes at once.
I admire your persistence!
The batter in your hair is definitely evidence of commitment!😊
The flipper 😂😂😂😂 I swear this homie is too funny. I've never in all the years I've been on this earth heard anyone call the spatula a flipper. I love this guy.
to paraphrase ann reardon: if the recipe takes that many attempt to get right, maybe it's a bad recipe
The dancing to the "elevator music" is killing me 🤣
Amazing!!! 👏🏽 you still kept going! We were cheering for you on this side lol 🥳
I love how you show us how you are trying so when that happens to us we well understand 😭🤧🤣
Your persistence is commendable! XD
Michael Lim is amazing!

You have so much patience, it’s amazing! I love the music too! Kudos to you!

Your dedication to this was amazing I would never 😂
12:11 BEST KZread MOMENT SO FAR 😭😂😂😂💔
I admire your tenacity. :)
LOL You didn't give up! I would have by take 3. 🤣 I love your videos!
Why didn’t you use ring molds?
I tried these recently and had some moderate success, however the amount of effort and general "babying" the cooking process required vs the reward of eating them did not align AT ALL. They tasted pretty underwhelming, and they also deflated quite quickly after removing them from the pan so you still didn't really get to enjoy a fluffy cloud-like pancake. I applaud your perseverance though - 7 rounds is a goddamn impressive marathon.
The thing that u were not quitting give us the hope tht maybe we can make it too its like u r doing it anyhow n so can we
This is exactly the kind of sh$t that happens to me when I try a new recipe! Congrats on sticking with it!
Add water in pan. You need to steam it
Your middle name must be Perseverence! Props to you for hanging in there.
That was a determined effort...but the payoff looked pretty damn good!
...but it looks SO EASY in the videos of street vendors making hundreds of these on a giant griddle! LOL This video proves how much of a skill and art it really is!
more hilarity ensues at your mishaps, your editing was masterful and the musical accompaniment on this one was just a little short of genius, Jamie 😉👍...(the mournful music at the next morning failed flipping made me burst out laughing!....and just a tip, Jamie?...any recipe I have ever done where the yolks and whites are incorporated with separate ingredients in a recipe, it's really important to gently as possible, fold in the egg white mixture with the yolk mixture (no whisking at all, at all, not even a little bit)....I think that's why you were having such a hard time turning the pancakes...with the egg white mixture gently blended in but still kind of distinct from the rest of the mixture, the exterior of the pancakes would have cooked and set much more quickly when exposed to the heat in the frying pan (the white of an egg always cooks the quickest)...might want to try that the next time....and not trying to be the boss of you, or anything!...just being helpful ☺)
Definitely heat and not enough non stick those things seriously effected the outcome. Spatula too 😅 I haven't tried these but I might eventually. I am a chef but kind of anti chef like you. I think a little more butter or oil might have helped as well. Fun videos to watch you have a great sense of humor 😁
wow that’s perseverance!
Haha great video. Man you are patient. Still looking forward to seeing your new kitchen.

Sorry man, I laughed when you burnt them 🤣🤣🤣. You're optimism and perseverance is entertaining 💖
Amazing ! Your batter looked wonderful and fluffy - the pancakes just needed more time and less batter to set and cook. These look lovely but are a little too fiddly to cook as everyday pancakes 🥞
You need a Fisk spatula and a crepe pan. Can you try Blinis next Guffaw
You know why you failed so many time? You forgot to put some water on the pan to steam the batter, not only it'll cook the batter through but also avoid the batter to burnt.
Music is great!!
I was dying from laughing at 11:59 🤣🤣🤣🤣🤣🤣🤣🤣🤣🤣
Oh my god, I feel with you! 😂
Not sure if anyone's told you yet, but they all use food grade stabilizers that keep them fluffy and full of air. It's not a listed ingredient but you literally cannot make them without a stabilizer
An excellent example of "over-thinking"!
The dancing at 10:11 is lit.
What a nightmare for you! It’s so great you never give up!
Так весело наблюдать за вами)
I was so intrigued that I went after some Japanese cooking channels. I might try it later...
This was an education. Fluffy pancakes? Not with. Looked good though. I am very impressed that you stuck it out to take 8. That's dedication homes
I’ve got yo make these but I can’t get my baking items down for another 10 weeks when I get off crutches!
I'm 7 min in, and I'm screaming, "for the love of God, use butter or oil when you fry." 1 tbsp. will make them not stick. Smearing/drying oil on with a tissue, does absolutely nothing. Kudos for keeping going
I notice that you have used both electric cook tops and gas cook tops....which one do you prefer?
This is EXACTLY the reason I only make waffles! Good on ya for not giving up and I'm glad I'm not the only one who drops multiple fucks in the kitchen...lol
I wish I could like this video twice
oil nonstick pan and only one. lol i love watching this
I'm laughing tears!
Why didn't you add more oil or cooking spray? Did I miss something? I love your videos.
I feel like a tuna can would help with form and heat distribution. Kudos on not giving up. That pancake tried to engage you in a war of attrition.
Now I feel better about those baguettes and the pudding failures.
Man U dont give up!
I'm watching this again, after getting my 15yr old hooked on your channel. You need more oil in your pan, especially the cast iron (it's all I use). More time with a lower heat, and a good spatulas(flippers)
For a man who originally described himself as having little or no interest in cooking there is a lot of passion here. Birdy
Yelling at my phone “just cook one at a time!”
Use a crepe pan or griddle.
Ceramic cooktop is a bugger to control the temperature.
This is a masterpiece. Look out Paul Thomas Anderson!
