Fish balls are ubiquitous in Singapore, but how many of the fish balls we eat are made by hand? Yellow-tail is the traditionalist's fish of choice and for good reason. It has high collagen content and gel-forming capabilities, and if you can get your hands on it, you should definitely use it. However, as I am living overseas, I am using basa fillets. I would definitely want to test this recipe again with the right fish to see how it compares!

Fishballs
Makes about 70 fish balls
1kg fish fillets, preferably yellowtail
200g ice water
4 tablespoons salt
1 1/2 teaspoon white pepper
1 teaspoon sugar
60g egg whites (optional, but I recommend this if you're using basa like me)
1 chilli, chopped (optional)
2 sprigs spring onion, sliced

I will try your recipe using squid, as that's the only fishy food I have in the freezer right now, but I bet it will taste as good as the yellow-tail version :)

I studied English abroad in Australia from Japan. then I had a host mother who is Chinese singaporerian. She gave me a congee with this kind of fish paste in it for my breakfast at every week ends. at that time I didn't know what that is, but I came back to Japan, I sudenlly miss it with I had no ideas...But your video reminds me and thaught me exactly what is that! Thx for sharing and You should be careful with coronavirus.

Remade! Great recipe, except for the salt. Down here in Jakarta the salt may be at different level of saltiness so it should only be 2 tbsp. Thanks for sharing.

True! Salts vary so much, best to do a quick taste test :-)
How to store them?can it last longer in the fridge?
Hi how would you recommend storing them in the freezer? Cooked or raw and in what medium? Thanks!

I wouldnt.. Freezing changes the texture of the fishballs, both raw and cooked!
I m using basa fillet to make it, but why my fish mixture seems like very watery? I don’t even add water, i use about 800g half frozen fillet, 2 egg white, salt, blend with food processor. The mixture can float in the cold water, but not as thick as yours in the video. Any idea of whats going wrong with mine?

Sorry, it is hard for me to tell what has gone wrong with yours. But perhaps you could try with fresh fish fillets next time!

I hv the same prob. The paste is very watery. I followed yr ingredients but turned up very watery. Can’t make into ball.

Basa but please use yellowtail/ potato fish if you can find :-)

It falls apart why
I think it is better to not use the water you used to thaw the fish because that water may be prone to having bacteria such as e.coli or salmonella.

I tried why it's can't becoming cew or hard jus soft like there are too much water but I didn't do that I just add some bit of ice cube just like make meatballs or bakso here we called it

@@lianasya6548 you can try working the fish paste more in a standmixer or by throwing it against a bowl until it becomes slightly 'firmer'
You are not sharing the detail. Pls. do not share half truth and let pp waste the ingredients.
