    I never fail to be impressed by her non-stop running commentary. Whether it be culinary history, instructive advice about "extremely useful" equipment, or amusing anecdotes, there isn't a smidgen of dead air as she executes her well-planned kitchen ballet, coping with any small error with confident aplomb. Still amazing after all these years.

    I am 58 yo today, yup ... the original spring 🐣! Does this show bring back memories and I still love the theme song. Julia Child was a legend and is a . She certainly was ahead of her time and broke through barriers of all kinds. Cookery would not be what it is today for women if it weren't for the likes of her. Some interesting facts about Julia Child that you may or may not know: She was very tall at 6', 2"s and she was a basketball player, she was the 1st woman inducted into the Culinary Institute of America's Hall of Fame in 1993, she became interested in food while living in China, she was fluent in French and 1 of the things I find most intriguing about her ... she was also a spy. 🎉🐺🎈🎂🏳‍🌈🍔🎇💥🎄🍟🍁

    I'm of the opinion that people who don't like fish, just havne't tried ENOUGH of it. Because unlike any other meat, fish varies SO MUCH between species in flavor and texture. I HATE catfish, and am limited in my liking of ocean fish (Orange roughy, Whiting, and Cod), but I've lived my entire life saying how much I LOVE fish, because growing up on a farm where we fished from our ponds.... the vast majority of fish I ate was Largemouth Bass, Crappie, Sunfish, and Perch.

    This lady still cracks me up!!! Love the suggestion of using a meat axe on brown sugar haha then use a 'mary-nary' sauce from a bottle but be sure to disguise the 'shame of it coming from a bottle ' hahaha

    I have a feeling she MIGHT have over-cooked that fish a bit.. but, oh well, it all looks fantastically delicious!!

    All the more extraordinary when you consider how she does this in front of one camera with a minimum of editing. Quite a feat (it couldn't be done today).

    No se si habrá traducidos programas de ella. Lo que si se consigue, es su libro arte de la cocina francesa vol 1 y 2. Que fueron editados en español hace unos años.

    I can't stop laughing at the ridiculous comments about alcohol remaining in the cooked food. There are, of course, people who shouldn't injest any alcohol for one reason or another. But texting while driving or spending your days on a cell phone is far dangerous than a few drops of alcohol. Get some perspective people!

    The focus here was being quick, and pitting apricots can take quite a bit of time. If you aren't in a time crunch, I'm sure that fresh would be even better.

    It would have been extremely difficult to find fresh apricots in the 1960s. Apricots in the local market would have been limited to only a week or two in season. I remember when even fresh oranges and grapefruit were available to just a few weeks a year when special refrigerated trains brought them out of Florida and Texas. We are really lucky to be living now when every kind of produce and seafood is shipped internationally every day of the year.

    @@darkwood777 Not True. If one is willing to do the heavy lifting. My great granny always had fresh preserved apricots! All year round..Stored in her cold basement. She'd preserve them in the summer . In Mason jars. They were better than fresh!

    No she and her sister Dorothy were both rather tall women. She met her husband Paul during WW2.

    Not that I oppose the use of alcohol in cooking, but it's not correct to claim that cooking something gets rid of all the alcohol. Cooking gets rid of the alcohol flavor, but this dessert dish would retain at least 35% of the alcohol. Source: US Department of Agriculture. Let's be advised. I'm surprised there's no disclaimers, seems like a lawsuit waiting to happen.

    You are correct, even after cooking something for hours some alcohol will still remain. But keep in mind the quantities of alcohol in most recipes are not enough to cause intoxication especially when it's being distributed among several servings and some of the alcohol is being cooked off. That's definitely the case when cooking with wine which has a lower alcohol content to begin with but it's even true with higher proof alcohols. The only exception I can think of is maybe a rum cake or a dessert that's being soaked in liquor. That definitely can cause intoxication if you eat enough of it. Still I think it's good to exercise caution when cooking with alcohol if it's going to be eaten by children or someone in recovery.

    This would only result in a lawsuit in this day and age. When Chef Child was presenting this program the idea that cooking removed the alcohol was an accepted precept. Also, the time this program was being aired was far less litigious than now.

    she used less than 3 ounces of vermouth, which is 18% alcohol by volume. So 35% (the remaining alcohol in the cooked dish) of 18% alcohol in 3 ounces is the risk an unsuspecting person would be dealing with. Scant risk of anything untoward happening, I would think.
