Fiorentina Steak | Reverse Searing or Traditional?

At today recipe, we are going to prepare two Fiorentina Steak.
One will be cook at traditional method and the one withing the Reverse Searing technique.
Reverse Searing core temperatures:
- Rare: 52C/125F (hoven at 60C/140F)
- Medium-rare: 55C/130F (hoven at 70C/158F)
- Medium: 60C/140F (hoven at 80C/176F)
- Medium-well: 66C/150F (hoven at 80C/176F)
- Well done: 72C/160F (hoven at 90C/194F)
I have not put any olive oil on the grill grades or on the Fiorentina, nor salt.
I personally prefere to let the meat fleavor profile to pop-up and allow my guest to adjust according to their taste.

    Thanks a lot for your feedback. It's always interesting to do some challenges, especially here in Italy, where yuo should cook fiorentina steaks only with the traditional method.

    I unfortunately don't have a charcoal grill and was planning on reverse searing on a cast iron skillet. I hope it won't turn out too poorly.

    It should not be an issue. I do love to finish them on cast iron skillet with a bit of butter 🤤. Keep me posted on the result

    ​@@SmokeKingBBQExperience I'm a bit late to post, but my weekend dinner party went perfectly!!! I do think I should've cooked it a bit rarer on the filet portion of the porterhouse though because I kept measuring the thermometer on the strip side instead which I think took longer to cook. Other than that it still worked out! I didn't get the same smokey flavor that I got from Firenze, but that just means I'll have to visit again. Grazie signore for your video!

    @@dannyy8619 it’s so nice to read this feedback. I’m happy about the results you achieved. Hope you will have more opportunities to come to Italy, maybe visiting Marche or Puglia reagin, which have the best meat products and way of cooking.
