    When using parchment paper, take your sheet, and crumple it up in a ball, and then when you spread it in the pan, it doesn’t curl up and you don’t have to fight it.

    Just had the most amazing canning win! Found a couple selling their nearly new presto electric pressure canner for less than half of the regular price and they included 8 dozen jars, unopened packs of lids, and all the canning tools they had. I’m so excited and figured who would understand my level of happiness better than the community here. PS I can’t even remember the last time I bought unsalted butter. I always bake with the salted stuff.

    You’re so right about the salted butter in baking! I was a kitchen manager at a cafe/coffee shop that sold baked goods and pastries. When I first started there we were using a recipe with unsalted butter for our sugar cookies which were nothing special to be honest. Then we hired a dedicated baker who used salted butter in her recipe and those sugar cookies were soooo amazing!!! They were actually craveable, which is not something that I’ve ever thought about any sugar cookie before! You could taste just a slight bit of saltiness which balanced the sweetness so well, and made all the flavors pop! So yummy!

    Just wanna say ty🥰. I'm from Sweden and today I made a pumpkin pie for the first time ever, using my own grown pumpkin. I was so proud and it was so delicious. It was so fun to find out what to do with all the pumpkins I got this year. I'm absolutly gonna can some of them.     Ok Becky just absolutely had to come visit you on my own. My mom (73) watches you and she turned me on to your videos. We watch you on the TV. My dear, we enjoy you with our morning coffee. I came in today around 3 in the afternoon and you were on the TV. As I walked past the TV I said “ Oh, Hi Becky good to see you and thanks for keeping my mom company today.” My mom laughed out loud and said “yes, she’s been here all day” I told mom we are going to start a drinking game.     I swear Becky you and I are two peas from the same pod. My Mom used to say I was an accident waiting to happen😊. My Dad at one point refused to take me fishing with him because I was a disaster in the boat. I think that was after I hooked him the second time. 🤣😂🤣. Surprisingly, I was always a really good athlete and cook! Do you Ladybug…you’re perfect just the way you are…spills and all‼️. This is most definitely my favorite channel.     Are you suggesting Becky is a Lady Bug organizer as Cas explains? If so, I completely agree, broad strokes, not a Bee...which is totally me. If Becky sees this without any context this should help: Cas , the Clutterbug has come up with 4 organization styles and 4 bugs that represent those styles. She elaborates in that depending on your bug she explains what works & doesn't work & how to make the most of your style. It's kind of fun and when you know your style it actually makes it easier for you to stay on organizing tasks.

    Just something I have learned...from Martha Stewart! If you crumble your parchment paper into a ball and then pull back apart, it will lay easier in your pans! I have done this ever since seeing her do it and it does make a huge difference! Love all your videos and would love an update on how your pregnancy is going! God bless you and your family!

    I learned from my french pastry teacher that to keep whipped cream in its shape, slowly whip it. Start low, mix for 3-4 min, turn it up, 3-4 min, and repeat until on full blast. Once it comes together, you can even use a piping bag. Just something to consider. It worked great in choux pastries with a lavender blueberry whipped cream (lavender and blueberry syrup that the cafe makes in house added to whipped cream)!

    Hey girl, I saw that your cinnamon is cassia. Cassia can be toxic in high amounts. Ceylon is what you want to buy. It’s more expensive but it’s also worth the amazing health benefits it brings.

    I love your show! A suggestion, when you refill your cocoa, sugars, flours etc. please throughly wash your containers rather than mixing fresh product in with existing product. That could just be me though!

    Welcome back! Tallow is incredibly easy to render. You could’ve asked the locker to keep the fat trimmings when you bought your beef. Typically it’s “leaf” fat (?) but I’ve been successful with it just asking my local grocer who still has a real butcher counter for beef (and pork =lard) fat super affordable. As a matter of fact, the last time I got pork fat, I trimmed off enough bacon to end up with 3 pounds of cooked bacon ends as well as 6 pints of lard for $5 😮. Never hurts to ask. My butcher does ask for about a weeks notice so they can collect the fat. Perfect win win for both of us, they don’t have to dispose of it and I get a product to process that is shelf stable. Looking forward to processing the pumpkins, I was gifted THREE 😃. ❤️ ya girl!

    I'm so glad you showed what you did with the zucchini. I had a few more left from my garden and I didn't want to just shred them or dehydrate them. I cut up the last 4 thawed pieces of bacon and got them cooking in my cast iron, added some of the frozen thing green beans from Aldi, some of my fresh garlic and some minced onion. Oh my word! It was chow! Last year was the first year I ever tried to grow garlic and I only got 7. This year I planted 40! lol I am using it in everything now

    A good tip for the cheese rinds is to add them to your soup as it is cooking and remove them before serving. I throw mine in the freezer and add to whatever soup I am making as they still hold a ton of flavour.

    Beckie, don’t throw away the rind of Parmigiano Reggiano! Keep them in your fridge in an air tight container or in your freezer and add them to soups, mash potatoes or polenta.     I make Parmesan Oil with the rind. Use it to dress pasta or freshly cooked veggies. 50 g Parmesan rind 3 cloves of garlic, crushed 4 sprigs fresh thyme 4 white peppercorns, crushed 250 ml extra virgin oil Place all ingredients to jar and allow to infuse for 48 hours. Can top up ingredients with olive oil for second time. Rind must be immersed in oil to prevent mold.

    I add mine to my tomato sauces when I’m making bolognese, meatballs, etc. - it adds a lovely creaminess to the sauce because it sort of melts into it.

    I just love watching you video! I just finished canning 37 qts of stewed tomatoes and 41 1/2 qts of V8 Juice/ tomatoes soup. I saw you use an emulsifier to juice up all your tomatoes and I tried it on all my veggies for V8 and the tomatoes and your so right it is such a GAME CHANGER! I said V8/Tomatoe Soup because after adding all my veggies and spices it makes the best tasting Tomatoe Soup!

    Glad you are felling rested. As you stated rest is productive. Especially at the end of your pregnancy you will need to rest more than ever. I absolutely love your channel and the addition of your parents from. Time to time. Your baking drawer keeps it simple when in the baking mode.     I do the very same thing with my zucchini! I saute 1/4 inch thick zucchini coins in a bit of avocado oil so that it's seared spotty brown on both sides, toss in some minced garlic and continue to cook for 30 seconds, remove from heat and then toss with salt, pepper, shredded parmesan cheese (even grated parmesan will do in a pinch) and then, toss in the secret ingredient...dried dill weed. The dried dill weed takes it to the next level. Another variation is that I rough cop 1/2 inch chunks of onion, red or orange bell pepper and saute that til I get some spotty brown sear marks and it's tender crisp, then toss that in with the aforementioned zucchini/garlic/parm/dill mix. So yummy. Tastes just as good as a leftover and can be used as a filling in omelets too.

    Thank you Becky. I make Lasagna Soup frequently. I use bow tie pasta instead of lasagna noodles, I also don’t use ricotta cheese, just some parm and Motz cheese. Was watching you HOA conference, hubby said I should go next year. Yeah me!!

    I've been watching your videos for a month or so and have been enjoying them! I love seeing you in the kitchen with your dear mom occasionally. Enjoyed seeing your adventures during the HOA conferences. I would love to go on an adventure like that with my dear sweet daughter (her name is Becky to) 😉 maybe we should learn canning together!     Those blueberry pie bars are delicious! Been making them for 20 years since a good friend shared the recipe! Yum! However I’m confused why when you use a recipe for the first time you don’t follow the directions exactly even if only to see how they are supposed to taste before putting your own twist on it.

    Oh no, I’m sorry to hear that you got sick from your Mother/Daughter trip!! Hope your Mom didn’t get sick too. I have 2 daughters myself, and doing special Mother/Daughter outings have always been my favorite things! I have one that loves to cook like me, and one that absolutely only cooks if she’s starving..lol I’m hoping that your little girl has that love for cooking like her Mama & Grma.:))

    First off, glad you're feeling better. Second, thank you so much for your kind, encouraging words in the middle. I feel so intimidated in my "own" kitchen, because I feel like I have to live up to my future brother in law and his deceased mom's cooking standards, but we cook so differently and I don't even enjoy half of what he makes, so I know it's my own insecurities. Ironically the other night I ended up completely winging a recipe with my boyfriend's help, and everyone loved it. I just truly feel inspired by your words to keep doing that. Thank you for all your work you put into your videos!

    Love when you cook. I get so many great ideas from you. I love your recipes on scratch pantry because they always leave room for my own flair.     Welcome home... Glad you are feeling much better. I have been off my feet for 7 weeks and this past week I have finally gotten so much done around the house. You're right, there is anxiety from having to rest. I am happy to finally be getting a lot done around the house this past week. Going to spend the next month deep cleaning lol

    One thing i love about watching these videos, is that becky never seems to put herself down after a mistake happens. It's always "well, i know what to do next time" or "you know, that's okay because mistakes happen".

    I love how you cook! I've never had enough money to buy specific things for meal making so I buy ~10 things in BULK that can easily be transformed into food from different countries based on spices /sauces (cabbage, onion, chicken, cilantro, zucchini, coconut cream, mushrooms etc = Mexican, Greek, Middle Eastern, Thai, Korean, Italian) I cook based on what needs to go first. I laughed when you said "recipes are guidelines", and my husband said "THAT DOESN'T APPLY TO BAKING FOR YOU." lolol I cannot bake to save a life but I still try with much enthusiasm and joy.

    I’m glad you are feeling better. You missed the fall foliage on the east coast. It’s been so gorgeous this week. But I was stuck in my kitchen baking for my bake sale… I grossed $750 on sticky buns, cinnamon rolls and Whoopie pies!!! 😮 I’m jealous of those drawers for your baking supplies!

    You may not see this but it is a cute story. The other day I was browning sausage to make biscuits and gravy. I was trying to follow your method and let my sausage get good and browned. While I was putting the biscuits on the tray my husband came up and stirred the heck out of my sausage! I told him I was trying to leave it… So that it could get that extra flavor… He’s a goof sometimes. He thought he was being helpful. Anyway, I thought it was cute.

    We also store our cast iron pans in the oven. I’m not sure why exactly but it works! Maybe because they are so heavy that it is nice to keep them right where we use them.

    Once you are able to purchase whole milk I suggest you make your own yogurt. So delicious and healthy. Very simple to make.I make4 quarts at a time.

    Becky, that was the MOST intuitive question and answer you have ever posed. It's OK to dip out, rest, listen to your body to let go and let God. All 1st time pregnancies are challenging. Listen to your body, don't make excuses just show grace to yourself for creating a living life. Chores and duties can wait. You are creating a miracle. #1 priority for the rest of your life.     Becky, when you freeze dry cilantro, cut off the stems and freeze dry them too. I powder them up. So nice to have on hand! Also a tip for your pepper quart jar... use a green shaker top from a parmesan can and a regular mouth jar. Fits perfectly!

    I was so happy when I found your channel. Your in my general area so our growing seasons are the same and you approach gardening and canning much the same way I do. I'm not the cook you are but am learning so much from you. It certainly spoke to me when you talked about your struggle to rest and take down time. I just had a foot surgery that means non weight bearing for 6 weeks.....horrifying to me. Watching your videos is helping me keep my spirits up, bless you.

    I found your channel last weekend and I've been inspired to just follow what you do. I've been in a funk all year and finally got some much needed mental health issues addressed.
