I absolutely love Chef John's little touch of American inspiration in this video. He made a pretty standard North Carolina mustard bbq sauce and it looks good. So so so good.

红糖炒糖色以及煲汤的葱姜投放顺序都是我未曾见过的手法，感觉张大厨对于烹饪真的有自己的一套理解！接着看到黄芥末酱排骨酱还有类似有些许西餐白酱制作方法的牛仔骨酱汁，再一次让我觉得张大厨虽然是个顶级中餐大厨，但是烹饪手法以及材料又从来不局限于传统中餐之中，太强了！！12分钟的视频，让我大受震撼，感谢教学！！ 最后提个小意见，牛仔骨的腌制教程那一段，屏幕上的材料切换得有点快，不容易看清楚，还是希望这一段节奏能放慢一点点~

I'm a butcher, and I cook very well, I boiled chuck steak, which is the shoulder, for 2 hrs than added seasonings, plus a sprinkle of gravy granuals from a supermarket, and soya sauce until all thichens and simmer for a while, lovely and tender and flavour some, but keep on a low to medium adding a little bit of water, then turning once all is reduced, then eaten all in on sitting, the steak was 1.5 kg
