    My recipe for hot cross buns calls for 80g of rum. BUT, from my experience, the rum causes the yeast to go to sleep and the dough needs many hours to rise properly. SO I measure out my 80g of rum into a glass measuring cup, heat it gently in the microwave oven (to drive off some alcohol) then add water to bring the total weight back to 80g.

    Btw, if you want to score the skin of the ham in easy mode, especially if your knives are not the sharpest, but even if they are, use disposable razor blades. The butcher shop I used to work at used them for scoring porchetta as we didn't process enough of it for the disposable razors to not be uneconomical to use for it.

    Sooooo, I thought hot cross buns would be a good idea, thing is you need to add ALL the ingredients to have them turn out! Forgetting the butter in the microwave is not recommended. Todays batch was simply outstanding, although I did weigh the dough out to 70 grams each, bigger buns and easier to cross with the sticky white dough. Never ever had a failure, that wasn’t my fault, using food wishes recipes and videos! Simply the best on KZread! Thanks you so much!

    Hi Chef John. I was wondering if you could one day do a video about your cooking equipment. Everything from your pots and pans to your stove. Would be nice to see what you use, maybe what your favourite item is. I'm also particularly interested in your oven. It looks like quite the unit and since I'm in the market for a new oven, if it's good enough for CJ, it's good enough for me!

    How do I center the yolks when making hard-boiled deviled eggs?

  • @patriciamorgan6545

    @patriciamorgan6545

    2 жыл бұрын

    I think the egg is in charge of that. There's a structure within the egg white, called the chalaza, which attaches to the yolk from each end of the egg. (It's that whitish stretchy thing you see in a raw egg white.) It roughly centers the yolk within the egg white (but perhaps a bit closer to the rounder end, which seems to be what's concerning you, if I understand correctly). Not much can be done about yolk placement during boiling (the chalaza will put the yolk where it will)....but if you make the deviled egg filling and then fill the yolk cavity using a piping bag, you can overfill a bit on top to skew the placement however you like. (But yes, the white will still be thicker at the pointy end, and thinner/softer at the rounder end, where people tend to grab the deviled egg, and hence squish the filling.)

    Hot Cross Buns - so what you're saying is, you pipe on a couple of lines of the homemade "paste" or "glue" we old folks used as children... before the stuff came into stores. Interesting... ....and now we know where the rest of the hot cross bun dough went... to the Easter bunny buns. ;-)

    In my entire life of 53ish years. Only had one lamb dinner that was good. Didn't even need any mint jelly to kill or drown out the gamey taste. Was a dinner my Dad's girlfriend made. I should have asked her how she did it. My Dad is gone now. No way to ask his girlfriend how she made the lamb so good. It was awesome. She moved away to Washington state. But the store I buy stuff from wants $50 a pound for lamb. Lol. I am exaggerating a bit. I been vegan since December last year. Doing a one year test to see how it affects my cholesterol and blood pressure.. LDL and HDL is awesome. Triglycerides are still a bit high. 3 more months till I a can gorge on real pork and meat. For one day. Going to have another blood test in december to check my triglycerides. Going to have one hell of a day with my bbq and smoker. Then going back to vegan. Going vegan works, Working on a vegan hotdog recipe. Some good ones online. But still not real good. They are edible and make a turd. But trying for fake vegan hotdog that will fool people.
