Enjoyable video. You didn't mention at what temperature oven before you put in the roughed up potatoes. Most chefs suggest 200C.

I’ve used goose fat and it gives then a bit of a sweet flavour which tastes yummy I did these for Xmas dinner 🥰🥰

I teach Food Technology and we made these potatoes in class yesterday for students to leave about dextrinisation. They were SENSATIONAL. 10 students ate 5 kg of potatoes! Roughing the potatoes up with the fork makes a huge difference. Thanks for a great recipe and the hot tips!

maybe boil them with skin n bruno albouze says they absorb less water and retain more nutrients that way
What temperature should we bake the potatoes in the oven at please?

I have a quick question (amateur home cook). Why wouldn't you salt and pepper before putting them in the oven (say during the flouring step to soak up more moisture) ? Won't seasoning after they are done just have the salt and pepper fall off?

The oil will help it stick after they are pulled out

400 or 425 usually the golden rule.
YUM! I bought duck fat today instead of goose fat not knowing it is equally as good for crispy potatoes.
Beef or Bison tallow also works great. The potatos will taste just like Mcdonalds french fries in the 1970's before they switched to vegetable oil 😋.
The Hulk retired, and makes duck fat potatoes for John Wick.
Why not just say baking soda? I am going to try the cooking it. Thanks.
Does the water need to boil already before tossing potatoes on?

I wash mines get rid of the starch it just makes cooking quicker by boiling tight away

In the ingredients linked in the description, BUT still didn't state C/F; at 200, have to assume C, which is roughly 400F. Hard to tell, really, he uses metric here and there, then imperial elsewhere... kinda all over the place. Pick 1 unit of measure and stick to it 🙄
The recipe does not specify the temperature of the oven.

If you want them to be properly crispy crispy then yes you do have to take off the skin

Experiment, leave a few with the skin on and see if it makes a difference.

No, skin crisps just as good as without skin. Besides, when you score it most of the skin disappears anyway. Seems like a waste of time step to remove.

When you cook the duck, you use all the fat you're left with.
Nooooo! Never, ever use evoo for roasting potatoes! It has too low a smoke point and will burn, making the potatoes bitter AF.
