I made this recipe today… I used frozen super sweet corn. I steamed the corn just enough so it wasn’t frozen anymore and a little warm. I followed the recipe with the exception of I used Mexican crema instead of the sour cream and mayonnaise. I have been craving Elote for weeks now and I have to tell you, this totally and completely satisfied my craving and now I can eat it for a couple of days. This was fantastic!!!

Tried this for the first time yesterday for a group of 6 at my BBQ (pork belly burnt ends). I was able to find all ingredients and just doubled your recipe. Everyone liked them. Will definitely be doing this again when fresh corn is in season! Thanks!

Great recipe for esquites! Much better than some better-known chefs on KZread! We choose to grill our corn, along with either serrano or jalapeno chiles, we believe the charcoal imparts mucho sabor, as well as the chiles too. Gracias amiga.

I think it’s funny she sounds so American until she try’s to sound Mexican with only specific words, that’s how you know she a fake Mexican…
Looks good. I like to roast the corn with it's husk still on but soaked in water for about fifteen to twenty minutes so it doesn't dry up while cooking. If you don't have a grill you can roast the corn in the oven. Thanks for sharing.

Hi!! I am so glad you and your friends loved it as much as I do. This is one of my go to appetizers/side dishes that everyone loves. I even make it in the winter with frozen corn since it's harder to find fresh corn.

I got addicted to elote's the first time I visited a flea market as a kid in the 1980's, it's like chasing that same amazing feeling all over again. The only thing I use different now that I'm all grown up lol is Extra Hot Chili Powder... I use Laxmi but Remi is just as good for that extra kick.

Try cutting the corn in a Bundt pan. Stick the small top end of the corn in the hole and the kernels fall into the pan.

Because everyone is white and has a Bundt pan. Just use a big bowl people.
I made this by accident frozen corn lime chilie fried in butter with Parmesan cheese salt and pepper. Didn’t know this was an actual thing

Theres a trick to corn I seen on another channel, she took the whole corn with leaves, popped in the microwave for two minutes, took it out cut the end off, pushed it out and even the stringy stuff came off.
Next time I'm in Mexico I'm gonna bring back a suitcase full of tahin!

I live in Mexico 2 months out of the year and I love mangoes frutas and coco with Tahin, limón and Chamoy ☺️☺️

You can actually buy it at any Mexican market or grocery store. I buy it all the time.

Linda Liddell we don't have Mexican markets here in the small northern Saskatchewan town where I live. No such thing in our grocery stores either. I suppose I can order it on Amazon but it's so much cheaper in Mexico!

Hi Christi, esquites are normally enjoyed immaterially after you make them but they can also be served at room temperature. I have also eaten the leftovers cold, and they were still yummy!
If I find the Mexican cream I shouldn’t put mayonnaise and sour cream?

I’m not a person who enjoys high spiciness and I thought it was a little spicy. I still added per the recipe and it was great.

Looks wonderful except for the cilantro.... can't stand it! LOL I have seen this with grilled bacon and caramelized onions, and peppers... which looks even better!! Still, looks great the way she makes it!

I cringe watching you use that knife!
LOL, Tajín is not "traditional" given that it is a relatively new product in the market. What's traditional is spicy chili powder (chile de árbol in powder form), lemon and salt. This way you don't get all the toxic chemicals that go into making Tajín.
I start from the middle of corn, slice down, then turn and do other side. I DISLIKE WOMAN WHO COOK WITH THEIR HAIR HANGING IN FOOD! SORRY! I TIE MY HAIR UP AND WEAR SCARF...ALWAYS.
