Yeah, the shark fins practice is incredibly cruel. They basically go out to the ocean, capture a shark and haul it up to the boat, cut it fins off and immediately toss the animal back into the water. The shark, still alive and bleeding out, then slowly sunk down the ocean since it can no longer swim, died a slow, painful death. And if I remember correctly, many sharks can only breathe as long as they keep swimming forward to push water through their gills, so they are also suffocating as well. Shit's messed up.
The story of humanity... Can I eat that? -- No. Are you sure? -- Yes. I'm going to eat it anyway, just in case.
If your dish has a built-in shame ritual... maybe thats a sign it shouldnt be a thing. XP

I imagine that the dish came into being out of an accident. Some psychopath serial killer in the making was drowning a bird in liquor and someone walked into the room "what're you doing there champ?" And he improvised, I'm trying a new recipe
Except for the Ortalan, I can see why all of these came about. Maggot cheese? You’re being sieged and your food goes bad, but you still have to eat, and it winds up being delicious to you. Fine. Makes sense. In a fishing village and need to find a way to eat the whole shark, then the fin texture is found to be desirable and valuable, I get how that happened. In a poor place without a lot of food, and a drought and poor fishing season, but some birds left their nests made of protein behind after hatching, I can see how desperation started people eating that. Then it just winds up being liked by the people. Then it’s WTF France. Like the sheer process of it.

@@Madjo-qj2ge foie gras makes sense. Like fattier meat tastes better, and means you have more food, so you really want to fatten up the goose. Then you eat all the parts of the goose, including the liver. They just find that the fatty liver tastes good. The funnel might look bad, but it doesn’t actually hurt the goose and they don’t seem to mind if you actually see it done instead of just pictures (goose throats aren’t like humans; don’t humanize the animals). Then for health issues from the excessively fatty liver, you’re killing the goose before that’s a problem. Long term health effects aren’t much a concern. It’s a process that looks bad only in diagrams and still pictures.

Shark finning is a horrible and wasteful practice. They'll catch a bunch of sharks, cut all their fins off then toss them back into the water while they're still alive. The poor sharks pass away in agony. Shark finning is one of many things that decimate shark populations worldwide.
The preparation and consumption of an Ortalon sounds like something you'd see in Little Nightmares.
Just realize that most of the really disgusting foods were probably made during times of famine when people had to get creative about finding thier next meal.

Analizing the ortolon songbirds are famine food, and like other famine foods the rest of the stuff was added later. My guess is the orignal method was just eating it after roasting and plucking. The tablecloth in my view came so that people wouldn't have to watch eachother eating them (kinda gross) then when it became a gourmand thing they added the grain/wine bits.
Ackee is relatively safe; tbh "wash/cook it or you might get violently ill" sums up a lot of things like cashews

I think fishermen need a special license to hunt and fillet sharks, it’s not fully frowned upon in Australia cause most fish and chips have shark as an option, usually a bit more expensive but it is delicious 🤤
I've had the cheese, it's ok 6.5/10 but the flavor is rare and unique, many cultures eat insects, we should focus on Midwest American white ppl who make hotdog jello

“Many cultures eat insects…” Yes but I don’t doubt that they at least make sure they can’t mass breed in your intestines. Say what you want about those “Midwest American White people”, but at least that hotdog jello isn’t turning their stomachs into a scene out of Society or Eyes Wide Shut.

I don't think there's such a thing as cheese without mold. Cheese is mold.

@@Dan_- Fresh cheeses like fresh mozzarella, ricotta, farmer's cheese, and burrata typically don't have mold unless they're left to age or are deliberately inoculated with mold spores.
