Spatchcock Chicken, or Butterflied Chicken, is an easy and fast way to prepare this delicious dish in the wood fired oven. To go with it are some roasted potatoes, sautéed broccoli, and a tasty gravy made from the pan juices. 1 Chicken, Spatchcocked
Chopped thyme
Salt Pepper
4 or 5 sprigs of thyme
6 tomatoes
2 shallots, quartered lengthwise
1 carrot, chopped
1/2 cup white vermouth (or white wine)
Olive oil
2 cups chicken stock

    I have just purchased a wood fire oven called a Zesti 1100 in Perth Western Australia. Over the last 6 months I have been watching 100s if not 1000s of videos on KZread firstly about Woodfire ovens, pizzas bread, tools and everything else to do with cooking in a woodfire oven. I now consider myself an expert on what Wood fire oven videos are good on KZread. I can honestly say yours are amazing and the best I have seen. I promised my wife that I would cook her this chicken dish for Valentines. Keep up the great work and I am looking forward to you next video.

    one reason could be that the oven is elaborate something a little more achievable after all we are here to learn if i had this device chances are i would not require instruction would hire one to perform the lesson if needed. as a tile man 30 years i make this no problem however i would not too big for urban density building lot, kids need the yard for one, alas mine are grown so you can give me this one and you and paesano make a nice petite oven with hand made mosaics. i say this in honesty nothing else as a matter of fact maybe i should come to Italia tell you myself cheers from Canada

    Hi again from New Zealand, Clive. Wow, another marvellous video. The way you describe the different dish sizes and the heat cycles is important, because I think a lot of us struggle with everything just cooking so quickly in these ovens. I'm definately going to get a nice freerange bird and some vege out of the garden, and do this spatchcock in the coming weeks. Just loved this.

    I happened to do basically this same exact recipe with the thanksgiving bird and it came out remarkably juicy and well cooked. I butterflied and salted the bird a few hours before cooking, and put it on a rack elevated above a bunch of fall veggies all seasoned with herbs, garlic and oil. I had to tend to it and watch it and just turn it so it didn't burn and that was basically it. This kind of cooking is amazing because its very open ended and requires your senses and frees you from the restrictions of measurements and recipes.

    Dude the tools you have, meaning pots and pans, you must be a cooking fan for a long time already, bravo. I have a wood oven aswell, but my cookings did not come to right. Now i know how, thank you very much. Building one is one thing, knowing how to ise one is a totally different thing.

    Great video again!! That simple but so tasty recipe, the Vermouth instead of wine tip is a good one, I'll keep that in mind. Certainly I would never poor THAT great wine into the food. Looking forward to the next video.

    Thank you Mike. One of my influences, Keith Floyd, said about wine "if it's not good enough to drink then it's not good enough to cook with". I've tried to follow that but it can be expensive, so using vermouth is a good substitute. Thanks for your comment. Clive

    Yes, indeed. Spatchcock small turkey in a ceramic kamado grill on my very small balcony. Use the back for turkey broth and deglaze with that and white port. Oh, my!

    I might have to buy the house next door and have my kids kick a ball over the fence right around supper time. I was just visiting my parents on the coast in Cali and they have a wood fired oven built into their kitchen. The people who owned it before them were chefs, but my parents certainly aren't. So for the last 12 years it's sat there unused until a couple weeks ago my brother and I decided to fire it up. I had no idea what I was doing, but despite that everything we made tasted great and the whole process was a blast. So now I am a little obsessed and want to built one in my yard...

    Your videos are wonderful. My son just finished a huge wood oven for me. I was thankful to find your videos as you make it look easy! I had a question about the dishes you used in the oven, where you did you purchase those? They appear heavy duty and deeper than most of what I can find locally.     I am currently in escrow for my new home in Pennsylvania (moving from California) and I have to admit that despite all of the other cool features of my new home... it's the Brick Pizza Oven in the backyard I'm most excited about!! But how to use it?? I hit youtube and found the most popular videos... then saw your one about cooking the porterhouse. I was HOOKED!! You have HANDS DOWN the best videos on this topic. Its no longer a "Pizza Oven" but a Wood Fired Oven. I cant wait to get my hands on this baby! Can we PLEASE close Escrow now???

    Hello Bob. Thanks for commenting. I started working on the pizza episode during the summer, but the temperature was so high outside that it was playing havoc with the dough. Filming takes time and large batches of dough don't like sitting out too long, so I put it on hold until the weather cooled down.

    I typically fire my oven up to the same temperature, which is around 650-700F/340-370C in the center of the oven floor. Then take advantage of the variable temperature between the fire and the oven opening. More to come. Clive

    Just did a SC chicken and smashed potatoes and some roasted carrots, in my wood oven, but i used my home made Tuscan Grill for the chicken, instead of a pan. Reversed the process, but started a wee bit too hot. Nice skin, but had to tent with foil to finish. So, I watch your videos for inspiration, but I try not to copy. But, thanks for the inspiration!!

    that's one lucky chicken, friend. I have a FornoBravo casa 36 and it's ugly as sin. As soon as it was capable of cooking I basically pushed all the guys out of the way and got to it. that was 9 years ago or so. there's nothing like a wfo. looks like you can use yours year round, too. good for you! ps marvelous production quality on your videos. thank you for sharing your talent and your passion.

    I heat the oven as I normally would, so it's around 700/750F - 375/400C where the fire is. I regulate the cooking by not having the pan too close to the fire, rotate it throughout cooking, and use the variable temperature between the back of the oven and the opening (which is around 400F - 200C).     Fabulous once again! IIs the 1/2 cup of vermouth divided - with 1/4 cup with the chicken initially and 1/4 cup to geglaze or is it 1/2 cup for each step? Thank you!

    Hello Duro. I light the fire at least an hour, usually two, before I'm going to cook. I usually take into account what I'm going to cook so I can decide how hot I want the oven and then that determines how large a fire I build. So for the chicken I was looking at an average temperature of 650F/345C. Thanks for commenting.

    Great videos. I’m planning on getting a wood oven very soon. Might go the stainless route due to space , portability and wood consumption. Would like to know the amount of wood required with an oven of that size. Beautifully done video and great back drop. Is that a villa somewhere in Italy? Would like to see more pizza videos !!

    Hello Max. Thanks for watching the videos. There are a number of factors when accounting for fuel. I find when using a very hard wood like oak that it will burn longer and hotter, so I'll use a bit less than if I'm using something like almond. For my oven I might get through around 20 to 30 pieces of wood during one cooking session. Lighting and getting it up to temperature might take around 10 to 12 pieces, and then another 10 or 15 depending on the what I'm cooking and the heat I require. If I want to maintain a fairly moderate heat then I might use smaller pieces, compared to larger pieces for a higher temperature. I hope that helps. Clive

    I heat the oven as I normally would, to around 700f/370c, then keep a gentle fire going so it's not providing too much heat to the side of the pan that's facing it. One of the great things about cooking in the wood fired oven is the variation in temperature between the back of the oven and the opening. That way you can move your dish around, and rotate it, based on how you want it too cook. Clive

    I don't keep an eye out for mistakes, but I am quite critical of KZread flicks. However, you guys produce truly impeccable films, and they are a tremendous (oh, fuck, that trumpian expression..) source of mental escape for us locked down. Every detail, from the All Clad vintage pans, the beautiful copper paella, the beautiful mise en place; I don't even like chicken that much, but I was glued to the monitor all the way to the end.     You can begin at around 350C. It's not just the temperature, it's the variable heat between the fire and the oven opening that you can use, depending on what temperature you're looking for.

    I cooked it for 25 minutes covered, and then an additional 50 to 10 minutes without the foil to brown the outside. Roasted potatoes usually take around 20 minutes. The center of the oven floor was around 650/700F or 340/370C. I used the variable temperature between the fire and the opening to place the dishes based on how much heat they were getting.
