Ep 34: Salt and Pepper Squid | Calamari !!

We’re dragging out the deep fryer to create the easiest and most fool-proof summer pleaser imaginable! Your guests are going to LOVE you when you walk around with a platter of these I promise you. No one can resist the crunch!
Ingredients:
For a main, one tube per person. For an entrée, I generally work to one tube per every three people.
For 2-3 tubes:
1 ½ cups rice flour
3 teaspoons cracked black pepper
2 ½ teaspoons salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon baking powder
Optionally.... 1 teaspoon cayenne pepper for a little kick. Try it without first.
3 egg whites, beaten until well airated
For the salad (Increase amounts to suit you):
Small bag Rocket (Arugula)
½ a sliced pear
Handful shaved parmesan
Vinegar (a splash, roughly 3 tbs)
Oil (a slightly smaller splash… roughly 2 tbs)
Salt and pepper to taste
For the lemon mayo:
Roughly half a cup mayo to half a juiced lemon. Try pimping it with dill…. Fresh garlic, pickles…………

    Just added squid to my shopping list - can't wait to try this!! Two quick questions: 1.) What does scoring the squid do? 2.) What kind of shaver are you using on the Parmesan? I did a pretty thorough search and couldn't find anything like it. Maybe an Australian shaver? Anyway, thank you for your time and videos, Chef. 🤤

    Thanks for watching! We appreciate it :) Ok..: 1. Stops them from curling too much and allows more flour mix in for extra crisp. 2. It’s a standard speed vegetable peeler. I’ll put a link in the description. Maybe not the exact same one but close enough :) Let us know how you go! Cheers :)

    TERRIFIC recipe love it, could I offer 1 tip, after you cut your squid into triangles, chop up 2 kiwi fruits mix through the squid let stand for 12 minutes only then rinse off under running water (thoroughly) then pat dry, continue with your recipe, it will give you the most melt in your mouth tender squid Cheers

    You can reuse it a couple of times, filtering in between. 👍🏼👍🏼
