Enjoy Your BACON! The Nitrate/Nitrite Cancer Scare Destroyed!

For years we've been told that processed and/or cured meats increase our risk of cancer. I decided to delve into the research and the common-sense of this issue and see what I could fine. You will be surprised at how strong one is, and how weak the other.
Nitrates and Nitrite containing salts have been used to cure meats for thousands of years, but only since the 1970's have we been told that these natural ions cause cancer. Can you enjoy your bacon, or should you avoid nitrate/nitrite due to the cancer risk?
It took me a couple months to cut through all of the emotion, blustering, and "expert opinion" on this issue and find out what the research actually shows. If you eat bacon. or other processed meats, you want to watch this video.

I came back to this video and research and you set me straight... reminded me to hold the line. It's all ok. Yay! (My fam is low carb btw, thanks to our son and YOU!). God bless you! That was my Mom's biggest fear (she had polio when she was 6, was in an iron lung) is that she'd be stuck on life support. That didn't happen: she dropped dead of a heart attack while climbing the stairs. Coronary artery disease. Most likely from the long-term intake of sugars combined with transfats (which were supposed to be "healthy") (she died in 99)

You are confusing a statistical risk factor with an anecdotal case. Young children that live and play near busy highways are at greater risk of sustaining a lethal collision with a vehicle than those who do not. You compare the number of deaths after several years and the effect is undeniable. This is why sensible parents don’t allow their children to play near busy roads. If a parent told you-well I know people that have lived on busy roads all their lives, in fact one is the oldest living person on record, so my kids are just fine playing there-you would think they had gone nuts. That’s essentially what you are saying. An increased probability risk of a disease occurring (or rain falling or anything else) does not guarantee that it will happen, it is an estimate of the chance that it will or won’t. Example: Having the BRC-1 gene increases a woman’s risk of developing breast cancer by 65% by middle age. This also means that 35% of BRC-1 gene carriers will not have developed breast cancer. Not having the cancer but having the gene is not proof that BRC-1 is of no consequence. One very old person eating her daily bacon ration tells us nothing about the potential carcinogenic effects of nitrates on populations.

I can confirm what you said about the celery salt thing. At the company I work for we blend spices and preservatives for the meat industry. We use a product that is made from celery. It is pure sodium nitrate but because it is made from celery not the chemical version of sodium nitrate it is called NATURAL by the meat industry. This stuff is very expensive too. Far more expensive than regular sodium nitrate. It's always amazing to me what THEY say is unhealthy and what the truth actually is. Thanks for clarifying the cured meat thing. I never stopped eating cure meats but now I will enjoy them with a whole new mind frame! Much the same as I enjoy my butter, lard, coconut oil, olive oil and other healthy NATURAL fats. Go, go keto and carnivore! Keto ended my trip to diabetes land 6 years ago! And I've never looked back. So this video is very helpful, but it left out any important finding. From the University of Wisconsin: "if high levels of nitrite exist in foods that are high in protein and are exposed to high temperature (>300°F) cooking, such as bacon frying, very small amounts (parts per billion) of nitrosamines (compounds classified as a carcinogen) could be formed." In other words, it's not the nitrite, but it's the combination of nitrites + protein + high temperature that can pose a small risk. Bacon tends to fry at around 400°F, so the act of cooking bacon can create a carcinogen known at nitrosamines.

It doesn't necessarily make one a hypocrite to give someone facts and then make a choice to not utilize that advice from those facts in their own life. That assumes that doctors are supposed to be the picture/standard of health themselves, when all they're obligated to do is provide factual advice and proper care to patients. It certainly isn't helping their advice pitch to patients when they themselves aren't walking the talk, I'll admit. But they are merely the messengers, not the models.

I have thought about my grandmother and all her brothers and sisters, whom ate everything fried. All the smoked meats they prepared on their farm, and all lived into their late 90’s. It's not even the cooking: it's that the nitrates combine in the stomach with the amino acids, creating nitrosamines, which are - allegedly - toxic. Some advise to eat vitamin C, or lemon juice, or Ascorbic Acid with food containing nitrates, because that would prevent the formation of nitrosamines.

I just did a search on this myself, well read the first thing I found. It seems that nitrates aren’t the problem but the nitrites in the presence of proteins and cooked to high heats can produces nitrosamines- those are known carcinogens. One study suggests microwaving bacon is the better option. However apparently frozen salted pork bellies (they have to be frozen due to no preservatives ) is a very tasty alternative. I think to make a better informed choice people should know about this!

I don't love cold cuts, but they're a convenience that I've avoided for years and felt guilty when giving them in my kids lunches now and then. I'm so sick of the misinformation in the nutrition world that cause us to bend over backwards trying to do the right thing, and yet, cereals get the seal of approval. SMH.

@Tumbleweed - I used to, as well, but let me tell you, I am reformed. I now LOVE avocado and guacamole. Since adding avocado and guacamole to my diet, I have entirely regained full rotation of a shoulder that I had thought I was going to have to have surgery for. Full, painless rotation!! I'm convinced I was deficient in potassium. I ate at least a half of an avocado a day to fix the shoulder. It took three months, so keep at it.

I stopped eating anything processed/man-made a couple of years back, in favor of a totally natural, whole-food Keto-based diet, on 22/2 IF everyday. I stopped eating much-loved bacon, concerned about the chemicals in our food. I guess I'm going to have to go get me some bacon......now! This is really going to make a difference to my OMAD.

Hi Ken. I've been a pharmacist for 50 some years. Before the current crop of anti-hypertensives there were 'nitrates' in abundance. Nitroglycerin is still used sublingually and topically. There were dozens of products like Peritrate (P.E.T.N), Isordil, etc. for angina and hbp. Only the NTG SL 0.4mg seems to still be in use. There is also a spray for sublingual use.

Cool cool… “Many of us know that we should steer away from processed meats and eat more vegetables if we want to be healthier and lower our chances of developing certain types of cancers. While there are many reasons processed meats aren’t great for our health, one reason is because they contain chemicals called nitrates and nitrites. But processed meats aren’t the only foods that contain these chemicals. In fact, many vegetables also contain high amounts - mainly nitrates. And yet research suggests that eating vegetables lowers - not raises - cancer risk. So how can nitrates and nitrites be harmful when added to meat but healthy in vegetables? The answer lies in how nitrates and nitrites in food get converted into other molecules. Nitrates and nitrites occur attached to sodium or potassium, and belong to a family of chemically related molecules that also includes the gas nitric oxide. Vegetables such as beetroot, spinach and cabbages are particularly good sources of nitrates. When we eat something containing nitrates or nitrites, they may convert into a related molecular form. For example, nitrate in vegetables and in the pharmaceutical form nitroglycerine (which is used to treat angina), can convert in the body into nitric oxide. Nitric oxide dilates blood vessels, which can reduce blood pressure. Another example is saltpetre - a naturally occurring nitrate sometimes used to cure pork. During the curing process, most of the nitrate in saltpetre converts into nitrite. It’s actually the nitrites that act as a preservative - not nitrates. They also give the meat its rosy appearance. And although vegetables mainly contain nitrates, a considerable amount of the nitrate consumed in vegetables is converted into nitrite by bacteria in our saliva. This saliva is then swallowed and so eating vegetables can expose the gut to high levels of nitrite. Cancer risk It’s actually sodium nitrite - not nitrate - that’s linked to cancer. But if consuming nitrites alone directly caused cancer, then even eating vegetables would be harmful to us. Given this isn’t the case, it shows us that cancer risk likely comes from when the sodium nitrites react with other molecules in the body. So it isn’t necessarily the nitrates and nitrites themselves that cause health issues - including cancer. Rather, it’s what form they are converted into that can increase risk - and what these converted molecules interact with in our bodies. The main concern is when sodium nitrite reacts with degraded bits of amino acids - protein fragments our body produces during the digestion of proteins - forming molecules called N-nitroso compounds (NOCs). These NOCs have been shown to cause cancer. Cancer-causing NOCs can form either during the preparation of nitrite-containing processed meats or during their digestion in the gut. This is because both the preparation and digestion of processed meats generate plenty of protein fragments for the nitrites to react with. Research shows that the NOCs already present in the processed meats we eat (known as “preformed NOCs”) are linked with a greater risk of developing rectal cancer than from NOCs that are subsequently formed in the body. By contrast, given that there are far fewer protein fragments in vegetables, these aren’t a significant source of preformed NOCs”
