Einkorn no knead bread

Einkorn wheat is the ancient grain that was a staple in man's diet for thousands of years. This wheat has never been hybridized and stands alone as the only wheat in its original form. It is now being grown in Italy and, more recently, the United States.
INGREDIENTS
5 cups einkorn Flour
1/2 tsp salt
1 1/2 cups water
1 TBS honey
1 TBS butter
1 TBS coconut or olive oil
1 1/2 tsp yeast
DIRECTIONS
Mix flour and salt together. Dissolve honey in warm 100-115° water, add oil/butter, and sprinkle yeast on top of the mixture. Let rest 5 minutes, or until it begins to foam up. Stir liquid into flour; don’t knead, and set aside for 30 minutes, covering plastic wrap or lid. (Add enough water to keep the dough sticky, einkorn flour will absorb the moisture during this rest period. The mixture looks similar to a bran muffin mix) The dough should double in 30-40 minutes.
Lightly oil your pan, scrape the dough into the pan, and smooth out with a spatula. Let rest for 30 minutes or until it doubles; covered with a bread cloth.
Brush olive oil on top of the loaf for a beautiful crust. While the dough is rising, preheat the oven to 400°. Upon placing the pan in the oven, reduce heat to 375°and bake for 35-40 minutes.
Once removed from the oven, let rest for five minutes in the pan, then place on a cooling rack, allowing approximately 1 hour to cool before cutting. For a softer crust, place a damp bread cloth over the bread while cooling.
Since my first loaf of einkorn, I have switched bread pans.

    Thanks you so much for posting this video. I have done your recipe quite a few times now and my family loves it. We have not bought bread since then. I did not expect for it to come out like sandwich bread. Thank you sir so much!!!

    Didn't find his recipe on his website so here it is (from the video) 5 cups Einkorn (one box Jovial wheat berries), ground 1/2 tsp salt 1-1/2 cups water 2 TBS Honey 1 TBS butter 1 TBS coconut oil 1-1/2 tsp yeast (I use SAF because it does not have to be proofed)

    My man...you didn't show the final product: the crumb! It didn't seem to have oven spring, so I am curious how the inside turned out. Einkorn is a real challenge to bake with, and I applaud you sharing your recipe. Thank you.

    I have only been using the Einkorn for tortillas. Starting to want to make other things with it, it is very very tasty and I don't have the health problems I have when using hybrid wheat. That said - I bought Jovial's cookbook. Now I've been making bread for 20 years so.....not a novice. But as beautiful as Jovial's cookbook is, it is definitely not for me. Their processes are so long and involved all I'd be doing is making bread - being a farmer, not possible (laughs). So I tried their simplest recipe for bread - what a mess that was. Gooey dough all over my marble counter - and I weighed everything just as they suggested. So after messing with it for a little while I just put it in the linen in a colander - a wet mass approximately looking like a loaf - LOL. Came back in a little while and plopped it into a pan and baked it - it took forever to bake it but it turned out well - dense - but we like our bread that way. Peasant bread we call it. I baked it in a USA fluted bread pan and it popped right out. On top of that - their bread recipe calls for 7-1/4 cups of ground wheat berries - that's like $7-8 for a loaf of bread. Definitely not going to work for this farm family as bread is a big staple around here. So we just consider it lovely that your recipe is basically the same I've been using for no-knead hybrid wheat bread, and less flour used. So here I am, back at your site. I want to thank you so much for making Einkorn bread making so simple. I didn't realize the first time I watched your videos, what a wonderful thing you have done here. So back to Thank You again - God is Great and meets every need, great and small. For all those out there that would also like to make Einkorn the one and only flour you use, but can not afford the outrageous prices they charge, I found by Googling, a woman who makes her own Einkorn AP by grinding the wheat berries then putting it through a fine mesh sieve 2-3x's. She puts the sifted part in, then the stuff that wouldn't sift. For some reason adding both separately makes a big difference and the recipe will act like AP. Who woulda thought?

    Looks amazing, but SO wished you had shown a clear view of it sliced! :(..........Would also have been great to see you taste it and describe the texture and flavour (UK spelling, lol)........love you though!

    Hi! Love your video so easy! BUT I’m so upset and frustrated my dough did not rise. I used instant yeast following your steps l even let it rest for 2hrs and nothing. I cooked it anyway and it turned out so dense. I don’t know what I’m doing wrong. 🥴

    Hi Kirsi, My brother-in-law was having the same problem and it turned out that he was using too hot of water with the yeast. If your yeast is fresh and the water somewhere around 100 degrees, you should expect to see the yeast foaming somewhat on the surface within about 5-10 minutes. Try letting the dough rest 30 minutes, skip the folds, and place in a pan. Let it rest in the pan another 60 minutes and it should rise. The batter must be rather sticky, resembling a muffin batter. If it is too dry it will be dense. Let me know how it works.

    I have 100% organic einkorn all-purpose flour - bought at albertsons. was that what yiu used ?? kw

    1-1/2 cup of water did not do it. I had to use total 4 cups of water to get the same dough.
